German Pancake's

I keep forgetting to add my families German Pancake recipe.

What you will need:
9"x13" glass baking dish
Wisk or hand mixer
6 Tbl butter
1 Cup milk
1 Cup Flour
6 Eggs
1/4 tsp Salt (optional)

It seems that if you put the ingrediance together one way it will turn out puffy & flat.
If you put it together another way it will be flat in the middle & the sides will get very tall.

Get out your glass baking dish size 9"x13"
Add
6 Tb Butter sizzle
Put in your oven on 425 while waiting for the butter to sizzle and oven to pre heat. Mix the ingrediance below.

1 cup Milk
1 cup Flour
6 Eggs
1/4 tsp Salt (optional)

Once the butter is sizzling (make sure to not over cook butter/burnt butter is not yummy) remove the baking dish from the oven. Pour in batter into the glass baking dish, be careful not to let  the butter pop on you. Put the dish back into the stove.
Cook for 25minutes and take out add the toppings of your choice.

Top with syrup, powder sugar, jam, strawberries or even whip cream.
We are simple we just go for syrup and powder sugar.

*You could also add to your batter Vanilla and Cinnamon to taste.

Banana's banana's What to do with all these banana's

I was able to get a bunch of free banana's after an event on the 4th of July.
Now they are starting to brown. Sadness starts to come, oh banana's please don't go brown...not yet.

We do love banana milk shakes & I do love banana bread. But there must be more yummy healthy amazing foods I could make with these banana's.

The benefits of banana's? As you may have seen on a previous post they are a great fruit.
Bananas

Wow now that we have learned more about the banana lets see some new recipes.

Banana Pancakes I
Prep Time: 5 Min
Cook Time: 10 Min
Ready In: 15 Min

Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon white sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 egg, beaten
  • 1 cup milk
  • 2 tablespoons vegetable oil
  • 2 ripe bananas, mashed

Directions

  1. Combine flour, white sugar, baking powder and salt. In a separate bowl, mix together egg, milk, vegetable oil and bananas.
  2. Stir flour mixture into banana mixture; batter will be slightly lumpy.
  3. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Cook until pancakes are golden brown on both sides; serve hot. 

MY Banana milk shake:              
One that I always make is the milk shake I don't measer this I just throw it all in the blender.
What ever banana's need to be eaten the most 2 or 3
Milk we get 2% a few cups
Sometimes Vanilla Ice Cream a couple spoons (I don't do this so much any more if thinking healthy)
If I have strawberries or blue berries I throw some in. (all berries are great for you!)
The way I measure it is how much I know will fit in to the glasses that will be used. I eye ball it....

Blend it up & enjoy.

I hope that makes sense.

I love receips & I have a hard time not using one but this its a peice of cake you throw in what you know you like & blend.
Also I have added wheat germ for the benefits... it gave a slight nutty taste & is good for you.

Easy Cinnamon Bread Recipe

This bread is a cross between a typical baking powder-leavened quick bread and a yeast bread. The result: a cinnamon coffee cake-tasting loaf that's wonderful served plain and incredible toasted.—Taste of Home Cooking SchoolPrep: 20 min. + resting Bake: 35 min. + cooling
Yield: 12 Servings

  • 3 cups King Arthur Unbleached All-Purpose Flour
  • 1/2 cup sugar
  • 2 teaspoons active dry yeast
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 1 cup warm milk (110° to 115°)
  • 1/4 cup butter, melted
  • 1 egg
  • 1 teaspoon baking powder
  • 1 cup cinnamon baking chips
  • Cinnamon-sugar

Directions

  • In a large bowl, combine flour, sugar, yeast, cinnamon and salt. In a separate bowl, whisk together milk, butter and egg. Add milk mixture to flour mixture; beat until smooth. Cover and let rest for 1 hour.
  • Stir baking powder and cinnamon chips into batter. Spoon into a greased 8-in x 4-in. loaf pan. Sprinkle with cinnamon-sugar. Bake at 350° for 35-40 minutes or until a toothpick inserted near the center comes out clean. Cool for 5 minutes before removing from pan to a wire rack to cool completely. Yield: 1 loaf (12 slices).

Very easy, I left out the cinnamon chips & cinnamon-sugar other wise all the same. I thought it tasted very good. I would make this again. Oh the house smells so good.

Bananas Foster French Toast

Bananas Foster French Toast
 French toast gets a tasty twist with the addition of bananas, rum extract and pecans. The use of cinnamon bread is ideal!

PREP TIME: 20 Min
TOTAL TIME: 9 Hr 10 Min
SERVINGS: 8

8 slices cinnamon bread, cut into 1/2-inch cubes (about 8 cups)
8 eggs
1 cup milk
2 1/2 cups real maple syrup
1 teaspoon rum extract
6 ripe bananas, cut into 1/2-inch slices
1 cup chopped pecans

1. Spray bottom of 13x9-inch (3-quart) baking dish with cooking spray. Arrange bread cubes in baking dish. In large bowl, beat eggs, milk and 1/2 cup of the maple syrup with wire whisk. Pour over bread in baking dish. Cover and refrigerate 8 hours or overnight.

2. Heat oven to 350°F. Uncover; bake 35 to 40 minutes or until golden brown along edges. Let stand 7 to 10 minutes before serving.

3. Meanwhile, in medium microwavable bowl, microwave remaining 2 cups maple syrup uncovered on High 1 to 2 minutes, stirring every 30 seconds, until warm. Stir in rum extract.

4. Sprinkle banana slices and pecans evenly over bread; drizzle with warmed syrup mixture. Serve immediately.

This is currently in the fridge waiting to be cooked in the morning.
I made the cinnamon bread from scratch a couple hours before cubing for this recipe.
I will be leaving out the nuts, rather then rum (I only have vanilla) vanilla will be used. I dont think I have a full 2 cups of syrup. Although there are a few changed I am hoping it will turn out tasty! Until tomorrow....

Black Bean Brownies

 Black Bean Brownies

Prep Time: 10 Minutes
Cook Time: 30 Minutes Ready In: 40 Minutes
Servings: 16

"These brownies are gluten-, dairy-, and soy free."
Ingredients:
1 (15.5 ounce) can black beans, rinsed and drained
3 eggs
3 tablespoons vegetable oil
1/4 cup cocoa powder

1 pinch salt
1 teaspoon vanilla extract
3/4 cup white sugar
1 teaspoon instant coffee (optional)
1/2 cup milk chocolate chips (optional)

Directions:
1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x8 square baking dish.
2. Combine the black beans, eggs, oil, cocoa powder, salt, vanilla extract, sugar, and instant coffee in a blender; blend until smooth; pour the mixture into the prepared baking dish. Sprinkle the chocolate chips over the top of the mixture.
3. Bake in the preheated oven until the top is dry and the edges start to pull away from the sides of the pan, about 30 minutes.

* So for a few years I have heard how great these brownies. I and my friend made these Thursday night. The results I left out the two optional items & took them to work.
My friend who also made added the chocolate chip but not the coffee. She said they were great the nice thing was that she wasn't craving to eat the whole pan.
At work I just sat them on the table people took them when I went & asked them what they thought some said ok but what is in it? One said is it ok if I throw it away.. they must be just to healthy?  One told someone, "oh those are so good you should try it".. the look on the guys face must have been shock because the one who offered started laughing.  My husband also tried it & thought it was very strong.
The results with out the chocolate chips it just doesn't tast like a normal brownie. I do want to try these again & see how much difference the chips would make.

I use to make this recipe all the time - recently I as akded to make this recipe & had forgotten all about Oh the apple dip. Yummmy! It's so easy & such a hit!

Ingredients
  • 1 package (8 ounces) cream cheese, softened
  • 1/2 cup packed brown sugar
  • 1/4 cup sugar
  • 1 teaspoon Spice Islands® pure vanilla extract
  • 1 package almond brickle chips (7-1/2 ounces) or English toffee bits (10 ounces)
  • 3 medium tart apples, cut into chunks

Directions

  • In a bowl, beat cream cheese, sugars and vanilla. Fold in brickle chips. Serve with apples. Refrigerate any leftovers. Yield: 2 cups.

Nutrition Facts: 1 serving (2 tablespoons) equals 174 calories, 9 g fat (5 g saturated fat), 20 mg cholesterol, 120 mg sodium, 22 g carbohydrate, 1 g fiber, 1 g protein.

Lemrick's Zucchini Browies

1 egg
1 1/2 cups of white sugar
1/2 cup oil

Mix Well.

1 tsp salt
1/2 tsp soda
2 cups peeled, graded zucchini
2 cups flour
1/2 cup cocoa
2 tsp vanilla
1/2 cup chopped walnuts

Mix well. Pour into a greased 13x9 pan. Bake 350 for 30minuts or until done. Let the bronies cool, then frost with chocolate frosting & ground nuts.

***I made these today they were moist & yummy.***

Green Machine Dessert

Macee here's the recipe I was telling you about....
**this is so easy & yummy!***
I decided just incase I didn't get a birthday cake I would make this..Oh yeah yummy!

Crust:
1/2 cup Butter
12 Large graham crackers
1/2 cup sugar

Melt butter, add finely crushed crackers, sugar and mix well. Set a side.

Filling:
1/2 gallon Lime sherbet
9 oz. cool whip
2 teaspoon lemon juice

Soften sherbet & cool whip, then combined all 3 ingredients in a large bowl.

Sprinkle 1/2 crust in the bottom of a 9"x12" pan. Top with filling then sprinkle the left over crust mixture to the top.
Freeze 24 hours...

Fit-as-a-fiddle Berry Pancakes

(From: The SleepOver Cookbook, By Hallie Warshaw)
I recomend this recipe me & my husband plan to make this again.

Ingredients:
1/2 Cup Whole-Wheat Flour
1/2 Cup unbleached all-purpose flour
1 tablespoon granulated sugar
1 teaspoon baking powder
1 teaspoon cinnamon
1 egg
1 Cup nonfat milk
1/2 teaspoon vanilla extract
1 tablespoon vegetable oil
2 tablespoons orange juice
1/2 cup fresh blueberries or frozen blueberries (thawed)

Maple syrup or applesauce
Vegetable cooking spray

Directions:
In a large Mixing bowl whisk flours, sugar, baking powder and cinnamon (dry ingredience). Form a well in the middle. Set aside.
In a small mixing bowl, whisk egg until foamy.
Add the milk, vanilla & oil, and mix to combine.
Gently pour the liquid mixture into the well of the dry ingredients and mix until just blended.
Add the Orange Juice & mix to Combine.
Gently stir in blueberries
Using 1/2c measure, pour the batter into the center of a lightly sprayed medium sized frying pan.
Cook for approximatly 3 min. or until underside becomes golden brown.
Using a spatula flip pancake over & continue to cook until otherside is golden.

Serve with butter, maple syrup, applesauce, powder sugar or anything you love on pancakes.

Cole Slaw

Ingredient:

1 package of cole slaw mix or shred cabbage, onion, carrots & celery
1/2 cup Mayo
1 tsp sugar
2 tbsp white vinegar
1 1/2 tsp celery salt

Directions:
Put all ingredients into a bowl. Stir well & chill for 1-2 hours before serving.

Healthy Fruit and Oat Granola Bars

These easy-to-make granola bars are lower in fat than many commercial snack bars, and don't have any of the additives or preservatives. That's a healthy recipe.
SERVINGS: 16 bars
COOK TIME: 40

INGREDIENTS
1 egg
1 egg white
1 cup light brown sugar
1 tablespoon canola oil
1 teaspoon cinnamon
1/4 teaspoon salt
1 teaspoon vanilla extract
1 1/2 cup toasted oats
2/3 cup dried cranberries, chopped
1/4 cup pecans, chopped
1 tablespoon all-purpose flour

PREPARATION
1. Preheat oven to 350 degrees F. Spread oats on a baking sheet and bake, stirring occasionally, for 15 to 18 minutes, until lightly browned and fragrant.
2. Reduce oven temperature to 325 degrees F. Line an 8-by-11-inch pan with foil. Lightly oil or coat with nonstick spray.
3. In a large bowl, whisk egg, egg white, brown sugar, oil, cinnamon, salt and vanilla extract. Stir in toasted oats, dried cranberries, pecans and flour.
4. Spread in prepared pan and bake for 30 to 35 minutes, or until golden brown. Cool; cut into bars with a lightly oiled knife.

I made this on 1/22/11 I used walnuts rather than pecans & rasins rather then cranberries. (I didn't have pacans & cranberries) I plan to make this again I cooked it over the 30min next time I will cook at 30min they were slightly over cooked.

French FRIES!

If you know me you know how much I love fries!
I found this receipe I have made once & will have to try again because I know I can do better.

French Fries (from book: Faster! I'm Starving!)
(serves 4)

3 large potatos
3 tablespoons olive or corn oil
Large Frying pan
1 turner that Won't Melt
plate and paper towels

Peel 3 large potatoes then cut them into 1/2-inch slices. Cut the slices into 1/2-inch wide strips.
Heat 3 tablespoons corn or olive oil in a large frying pan over high heat. Add the potatoes and cook for 10-15 minutes, turning frequently, until they are brown. Drain on paper towels and serve immediately.

* I melted my turner & burnt some of them. Must try again.

Because some of this just didn't go so well I figured I better make fry sauce to go with it.
Ketchup, Mayo & a little Mustard (optional) I mixed it to fry sauce color & was all set.

20 Minute Biscuits

20 Minute Biscuits (from book: Faster! I'm Starving!)

Serves 4
Prep Time 5 Minutes
Cook Time 15 Minutes
*Time-Saving Tip: Bake at a higher temperature

1 cup Flour
½ cup Milk
2 tablespoons Mayonnaise
1 teaspoon Baking Powder
½ teaspoon Salt

Place an oven rack in the middle position and preheat the oven to 425 degrees F. Line a baking sheet with aluminum foil for easy cleanup.
Put the flour, milk, Mayo, baking powder & salt into a medium bowl and mix well. The mixture will be sticky. (YEP IT WILL!)
Scoop out 1 heaping teaspoon of dough and drop onto the foil on the baking sheet. Repeat until all the dough is used up. There should be 10 to 12 biscuits.

Bake for 15 minutes, or until the tops of the biscuits have begun to brown. Remove from oven. When cool enough to handle, pull the biscuits from the foil and serve.

*Tip: The baking time and temperature can be adjusted to coordinate with other parts of the dinner you may be baking. For instance, you can bake these biscuits at 375 degrees F for 20 minutes or 400 degrees F for about 18 minutes.

Easy Crock-Pot Vegetarian Three Bean Chili

  • 1 can (15oz) black beans, rinsed and drained
  • 1 can (15oz) garbanzo beans, rinsed and drained
  • 1 can (15oz) kidney beans, rinsed and drained
  • 1 cup dried lentils, rinsed and sorted
  • 1 large vegetarian vegetable bouillon cube, crumbled (I use any bouillon)
  • 3 cups water
  • 1 can (10oz) diced tomatoes and green chilies (rotel), undrained (I have dont add the chilies)
  • 1 can (8oz) tomato sauce

Mix first seven ingredients in Crock-Pot, cover and cook on low heat for 8-10hours, adding more water if too thick or sticking. Stir in Rotel and tomato sauce and cook 5 minutes to heat through. Will thicken up with time. Use when thin as chili and for tacos or on taco salad when thickened.

This recipe was given to me from my Mother Inlaw. It really Yummy & very easy.

Green Witch's Brew

**I made this for our halloween work party 10/29/10 it was really good & foamed. It really does look like Witch's Brew. EASY will make again!***

Green Witch's Brew:
1/2 gallon lime sherbert
2 liter bottle lemon-lime soda

Soften a half-gallon of lime sherbet for an hour or so, then remove it from the carton and place it in a punch bowl. Pour a 2-liter bottle of cold lemon-lime soda over the sherbet and stir until the sherbet is completely melted. The green liquid is delicious and inexpensive.

**I tried this today with out the cayenne because I dont have any & it was pretty good.**

Have a cough that just won't go away? Try The Doctors' Cough Remedy!
1 cup grapes (with seeds)
2 tablespoons honey*
2 tablespoons lemon juice*
1 dash cayenne pepper*

*Adjust proportions to taste

Combine all ingredients and mix in a blender. Serve warm, as the warmth of the liquid will not only soothe
the throat and lungs, but also help break down mucus buildup.

The ingredients in the cough remedy work in the following ways:
Grapes
• The seeds contain high levels of proanthocyanidins, natural chemicals packed with powerful antioxidant
properties.
• They fight against lung cancer and promote positive lung cell growth.
Honey
• The texture can help soothe and protect the throat from irritation.
• Naturally fights bacteria and is helpful in attacking germs that colonize in the nose, sinuses and lungs.
• Infants under the age of 1 should never be given honey, as it can cause serious digestive complications or
even death.
Lemon
• It is a natural cold expectorant.
• Soothes inflamed throat membranes
• Makes the throat less vulnerable to irritation, which can cause coughing.

Chocolate Peanut Butter Cookie Duo

My coworker told me of these really great cookies so I got the blog so here it is: I made these on 10/3/10 they are very yummy 1 note I ran out of the peanut butter so I ended up with a few of just chocolate cookies man do you need milk with those... they are still pretty good.

Chocolate Peanut Butter Cookie Duo

Peanut Butter Cookie
1 Cup creamy peanut butter
1 Cup granulated sugar
1 egg

1. Mix all ingredients together in a bowl until well combined. Set aside.

Chocolate Chip Cookie
2 sticks softened butter (1 Cup)
1 Cup granulated sugar
3/4 Cup brown sugar
2 eggs
1 teaspoon vanilla
1 3/4 Cups flour
1 1/4 Cups cocoa powder (I used Hershey's)
2 teaspoons baking soda
1/4 teaspoon salt
1 Cup chocolate chips

1. Preheat oven to 350 degrees F. Cream the butter and sugars until well combined. Slowly beat in eggs and vanilla until well combined. Place flour, cocoa powder, baking soda and salt into a large bowl; mix with fork or sift. Add to wet ingredients along with chocolate chips until just combined.

2. Take a Tablespoon of Peanut Butter Cookie Dough and a Tablespoon of Chocolate Cookie Dough and gently press together forming a “not so perfect” ball. Don’t press and roll too much, just stick them together and place onto a silpat or parchment lined baking sheet. Bake for 9-11 minutes or until cookies are cooked through to your liking. Let cool for 5 minutes before transferring to a cooling rack. Enjoy!

Boiling chicken....

So as you may or may not know I struggle with cooking chicken.

Another co worker mentioned boiling chicken, SO since I have some chicken breasts that need to be eaten I think I will give it a shot today.

Here are her instructions:
When I cook chicken, I put it in a pot(frozen), fill the pot with water, and boil it for an hour + depending on how much chicken. Most of the time the water has boiled way down. (make sure to cover chicken & then some with water)

Will see how this goes & hopefully I will conquer cooking chicken!
I am also thinking I will make potato's & green salad.

I hope thinks works, keep your fingers crossed!!!!

*****I was success full!!!! I cooked the chicken for over an hour it was getting close but not close enough Steve didn't think there was enough water covering to get it cooked all the way....at the same time I was cooking potato's in the oven I decided with the help of Mom to take the potato's out & put the chicken in for 20min. (still on 400 where the potato's were) It worked!!!! The chicken was great!!! ********

Easy Ramen veggie dinner mix

Another recipe from a coworker
Not sure what to call it..........

One pkg of cooked Top Ramen (drained, omit seasoning until later)
bag of frozen veggies cooked
1/2 can of cream of Cheddar broccoli soup
Mix all together if you want to add the seasoning now is the time.
Dinners ready!

I made this a few nights ago make use to add seasoning other was it's kinda plain. It was good I think if you add peices of chicken it would be even better. Steve did like it!
