Cinnamon Vanilla Berry Water

Cinnamon Vanilla Berry Water

Ingredients:

300mL cold water (The use of soft water is preferable, i.e. low in calcium and
minerals, as any water high in calcium can increase the rate of oxidation of the
ingredients, thus altering the flavor and the aroma. Therefore, it would be good to
use water typically to make green tea or sake in the Japanese tradition.)

20g dried or fresh blueberry
20g dried or fresh cranberry
3 sticks of vanilla
1 cinnamon stick
2-3g of brown sugar (optional)

Procedure:

Put all ingredients together in a pan. Dr./Chef recommends using a pan that
allows just enough space for the combined ingredients for evaporation, for
example, a small 400mL capacity pot. If you are using dried berries, it is
preferable to let them sit in water a few hours prior. If you are using fresh berries,
this is not necessary. Bring to a boil and then turn the heat off, leaving it above
the stovetop range, and cover it. Keep covered for at least 30 minutes to trap the
aromatic and gustatory elements. Strain the water and let cool. Conserve in the
refrigerator at approximately 46°-47° F.

Serve no more than 40-50mL in each glass.

It’s preferable to have “seconds” of this quantity various times than to pour a
glass surpassing this quantity.

**I started this on Sunday it's now Tuesday I am still wondering if it is working. I must say I am getting my 8 - 8oz** After doing this for 2 weeks I don't believe I lost any weight. Other reviews said they did. I do feel like I was feeling much better because I was getting my 8-8oz or more in a day. So I do recommend doing this if it helps you with your water goal.

No-Stress Hot Cider


Ingredients:
2 quarts unsweetened, organic cranberry juice

1 ½ cups dried cranberries

1 teaspoon vanilla extract

2 cups honey or agave nectar

2 cinnamon sticks

14 whole cloves

Zest of 2 oranges
Directions:
Pour cranberry juice into a pot, heat completely but do not boil. To the juice, add the zest from the

oranges, cloves, cranberries, vanilla extract, honey and cinnamon sticks. Heat, stirring

occasionally until hot and steamy, for about 20 minutes. Pour and enjoy!

Cranberry-Walnut Bread & Muffins

Cranberry-Walnut Bread & Muffins

Total time: Overnight, 24 mins. to 1 hrs 5 mins.
Yield: 1 loaf or 12 muffins

Ingredients:

4 tablespoons butter
1/4 cup vegetable oil
1/3 cup granulated sugar
1/3 cup brown sugar
2 large eggs
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
3/4 teaspoon salt
1 teaspoon vanilla extract
1/8 to 1/4 teaspoon almond extract, optional
3/4 cup sour cream or yogurt, full-fat or low fat-preferred
1 cup King Arthur Unbleached All-Purpose Flour
1 cup King Arthur White Whole Wheat Flour or Premium Whole Wheat Flour
1 cup dried cranberries
1/2 cup walnuts

coarse white sparkling sugar or Demerara sugar, optional, for topping

1) Preheat the oven to 425°F for muffins, or 350°F for a loaf. Lightly grease a standard muffin tin. Or line with 12 paper muffin cups, and grease the cups with non-stick vegetable oil spray; this will ensure that they peel off the muffins nicely. If you're baking a loaf, lightly grease an 8 1/2" x 4 1/2" loaf pan.

2) In a medium-sized mixing bowl, beat together the butter, vegetable oil, and sugars until smooth.

3) Add the eggs, beating to combine.

4) Stir in the baking powder, baking soda, cinnamon, salt, the vanilla and almond extracts, and the yogurt or sour cream.

5) Place the flours in a food processor with the dried cranberries. Process until the berries are coarsely chopped. Add the nuts (if they're not chopped), and process briefly, just until the nuts are chopped up a bit.

6) Stir the flour mixture into the wet ingredients, mixing just until everything is thoroughly combined.

7) Divide the batter among the wells of the muffin tin, filling each one about 3/4 full. Or scoop the batter into the prepared loaf pan. Sprinkle muffins or loaf with coarse white sparkling sugar or Demerara sugar, if desired.

8) Bake the muffins for 14 to 15 minutes, until a cake tester or toothpick inserted into one of the center muffins comes out clean. Bake the loaf for 45 to 55 minutes, until a cake tester or toothpick inserted into the center of the loaf comes out clean.

9) Remove the muffins or bread from the oven. Tilt the muffins in the pan to cool a bit, then transfer them to a rack to finish cooling. Serve warm or at room temperature. Allow the loaf to cool in the pan for 10 minutes, then turn it out onto a rack to cool completely. For best results, don't slice until completely cool. Store muffins or bread well wrapped, at room temperature, for 2 to 3 days; freeze for longer storage.

Tips from King Arthurs bakers:

For a nice hint of orange, substitute 1/4 to 1/2 teaspoon Fiori di Sicilia flavor (to taste) for the vanilla and almond extracts. For stronger orange flavor, stir in the grated rind of 1 large orange, omitting the almond extract.
Want to make this bread (or muffins) without whole wheat flour? Substitute 1 cup King Arthur Unbleached All-Purpose Flour for the whole wheat flour.
If you prefer a bolder cranberry statement, leave the dried berries whole, rather than chopping them up

Take-a-Break Snack Mix

Serves: 10; 1/2 cup per serving
Ingredients:



Cooking spray
¼ cup sliced almonds
1 tablespoon light brown sugar
2 teaspoons water
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
2 cups whole-grain oat cereal with yogurt-flavored coating
2 cups whole-grain wheat and bran flakes with raisins
1/2 cup dried unsweetened cranberries
1/2 cup dried unsweetened blueberries



Cooking Instructions:
Put a piece of aluminum foil about 12 inches square on a platter or baking sheet. Lightly spray with cooking spray. Set aside.

In a small nonstick skillet, dry-roast the almonds over medium heat for 2 to 3 minutes, or until lightly golden brown, stirring occasionally.

Stir in the brown sugar, water, cinnamon, and nutmeg. Cook for 1 to 2 minutes, or until the liquid has evaporated and the almonds are coated with the mixture, stirring constantly. Transfer to the foil. Let cool completely, 15 to 20 minutes.

Meanwhile, in a medium bowl, stir together the remaining ingredients.

Add the cooled almonds to the cereal mixture, stirring to combine. Store in an airtight container for up to 7 days.

Chipotle Chile Powder
With flavor combining fiery, smoky, and chocolate-like nuances, chipotle chile powder finds affinity with a surprising array of foods.

Garlicky dip for crudités: Combine 1 cup cold mashed potatoes, ¼ cup extra-virgin olive oil, 1½ tablespoons fresh lemon juice, and 2 minced garlic cloves in a food processor; process until mixture is creamy.

Cranberry Sauce
Sure, leftover cranberry sauce is a tasty (if predictable) spread for turkey sandwiches. But try it in these unexpected applications.

Muffins: Stir ¼ cup cranberry sauce and ¼ cup shredded Monterey Jack cheese with jalapeño peppers into prepared batter from an 8.5-ounce package corn muffin mix; bake as directed.
Salsa: Combine ½ cup cranberry sauce, ¼ cup chopped onion, and 1 tablespoon each chopped jalapeño, cilantro, and lime juice.
Salad dressing: Combine 3 tablespoons cranberry sauce, 3 tablespoons olive oil, 1 tablespoon red wine vinegar, and 1 teaspoon Dijon mustard; toss with arugula.

Roast Turkey
Great in soups and stews, casseroles and of course sandwiches, leftover turkey is even better when recast in unexpected dishes.
Our Secret Twists
Wontons: Pulse 1 cup chopped turkey, 1 cup sliced shiitakes, ¼ cup chopped green onions, 2 teaspoons soy sauce, and 1 teaspoon grated ginger in a food processor until minced. Add 1 egg white; pulse 2 times. Fill wonton wrappers; simmer in turkey stock or broth.
Turkey patatas bravas (a riff on hash): Cook a 20-ounce package diced potatoes with onions per directions. Add 1 cup chopped turkey, 2⁄3 cup tomato puree, 4 minced garlic cloves, ½ teaspoon ground cumin, and ½ teaspoon crushed red pepper; cook 2 minutes.

Ham
Make our hash brown cakes: Combine 1½ cups shredded ham, ½ cup chopped green onions, 2½ tablespoons all-purpose flour, ¼ teaspoon salt, and 1 (20-ounce) bag refrigerated shredded hash browns. Add 2 large lightly beaten eggs; toss well. Scoop mixture by ¼-cupfuls into 1 tablespoon canola oil per batch in a large nonstick skillet over medium heat; flatten slightly, and cook 5 minutes on each side or until browned.
Use as a substitute for higher-fat bacon: Cook finely chopped ham in a skillet over medium-high heat until crisp and well browned. Toss with sautéed green beans, serve on salads, or sprinkle over pasta.
Add savory flavor to breads: Add ½ cup diced ham and ⅓ cup shredded sharp cheddar cheese to your favorite biscuit dough or pancake or waffle batter. Or add ¼ cup finely chopped ham to non-dessert biscotti, like our Savory Two-Cheese Biscotti.

The beauty of this granola recipe is that you can add in whatever you have on hand -- dried apricots, cherries and pistachios work as well as the fruits and nuts in the original recipe.

SERVINGS
Makes around six cups of granola

INGREDIENTS
4 cups old-fashioned oats
1/2 cup chopped almonds
3/4 cup shredded coconut
1/4 cup packed brown sugar
2 tablespoons vegetable oil
1/4 cup honey
2 tablespoons pure maple syrup
1 teaspoon ground cinnamon
1 1/2 teaspoons vanilla extract
1/2 cup raisins
1/2 cup dried cranberries

PREPARATION
1. In a large bowl, combine oats, almonds and coconut; set aside.
2. In a saucepan, combine brown sugar, oil, honey, maple syrup and cinnamon; bring to a boil.
3. Remove from the heat and stir in vanilla. Pour over oat mixture; stir to coat.
4. Spread in a large shallow baking pan. Bake at 350 degrees F for 15 to 20 minutes, stirring occasionally. Cool.
5. Add raisins and dried cranberries. Store in an airtight container.

Healthy Fruit and Oat Granola Bars

These easy-to-make granola bars are lower in fat than many commercial snack bars, and don't have any of the additives or preservatives. That's a healthy recipe.
SERVINGS: 16 bars
COOK TIME: 40

INGREDIENTS
1 egg
1 egg white
1 cup light brown sugar
1 tablespoon canola oil
1 teaspoon cinnamon
1/4 teaspoon salt
1 teaspoon vanilla extract
1 1/2 cup toasted oats
2/3 cup dried cranberries, chopped
1/4 cup pecans, chopped
1 tablespoon all-purpose flour

PREPARATION
1. Preheat oven to 350 degrees F. Spread oats on a baking sheet and bake, stirring occasionally, for 15 to 18 minutes, until lightly browned and fragrant.
2. Reduce oven temperature to 325 degrees F. Line an 8-by-11-inch pan with foil. Lightly oil or coat with nonstick spray.
3. In a large bowl, whisk egg, egg white, brown sugar, oil, cinnamon, salt and vanilla extract. Stir in toasted oats, dried cranberries, pecans and flour.
4. Spread in prepared pan and bake for 30 to 35 minutes, or until golden brown. Cool; cut into bars with a lightly oiled knife.

I made this on 1/22/11 I used walnuts rather than pecans & rasins rather then cranberries. (I didn't have pacans & cranberries) I plan to make this again I cooked it over the 30min next time I will cook at 30min they were slightly over cooked.

Chilled Pineapple-Cranberry Relish
from REALSIMPLE

Hands-On Time: 10 minutes
Total Time: 2 hours, 25 minutes (includes cooling time)
Make about 4 cups

Ingredients
1 tablespoon unsalted butter
2 tablespoons grated fresh ginger
16 ounces cranberries (fresh or frozen)
1 cup fresh orange juice
2/3 cup sugar
1/2 cup apricot preserves
2 small Granny Smith apples—peeled, cored, and chopped
1/2 pound chopped fresh pineapple (1 1/4 cups)


Directions:
Melt the butter in a saucepan over medium heat. Add the ginger and cook, stirring, for 2 minutes. Stir in the cranberries, orange juice, sugar, and preserves. Bring to a boil, reduce heat, and simmer, stirring occasionally, until the cranberries burst and the sauce thickens, 15 to 20 minutes.

Remove the sauce from the heat and stir in the apples and pineapple. Let cool to room temperature.

Refrigerate in an airtight container for up to 1 week.
