Grasshopper Cheesecake - Lion House

Grasshopper CheesecakeMakes 16 servings.

Crust
1 ½ cups slivered almonds
¼ cup powdered whey
2 tablespoons sugar
¼ cup butter, melted

Ganache
4.5 oz bittersweet baking chocolate
¼ cup heavy cream

Filling
3 (8 oz) packages cream cheese, softened
¾ cup sugar
¾ cup sour cream
1 teaspoon peppermint extract
Green food coloring, as desired
4 eggs
Whipped cream, for garnish
Chocolate sauce, for garnish
Preheat oven to 350 degrees F.
For crust: Place almonds in food processor fitted with an S-blade. Process until almonds are a medium-fine texture. Add whey and sugar and pulse once. Place almond meal in a bowl and drizzle melted butter into it. Mix with your hands until it feels slightly squishy. Press into the bottom of a 10-inch springform pan. Bake 12 to 15 minutes, or until lightly browned and slightly pulling away from the sides of the pan. Remove from oven and let crust cool while you make the ganache.
For ganache: Melt chocolate with cream in the top of a double boiler over simmering water. Whisk well to make a smooth, shiny ganache. Spread evenly over the crust and set aside.
Reduce oven temperature to 325 degrees F. Place a pan of water on bottom rack of oven.
For filling: In a mixing bowl, beat cream cheese until smooth, scraping down the sides of the bowl often. Beat in sugar and sour cream and mix well. Add peppermint extract and food coloring. Add eggs, one at a time, beating after each addition until very smooth and creamy.
Pour the mixture into the chocolate-coated crust. Place cake in the oven, on the rack above the pan of water. Bake 1 hour. Turn off oven and prop the door open to cool cake slowly for 1 hour so the cake will not crack.
Remove from oven and chill at least 2 hours. Remove sides of pan and slice into 16 even pieces. Garnish with whipped cream and a drizzle of chocolate sauce.

  • 1 package (8 ounces) cream cheese, softened
  • 1/2 cup packed brown sugar
  • 1/4 cup sugar
  • 1 teaspoon Spice Islands® pure vanilla extract
  • 1 package almond brickle chips (7-1/2 ounces) or English toffee bits (10 ounces)
  • 3 medium tart apples, cut into chunks

Directions

  • In a bowl, beat cream cheese, sugars and vanilla. Fold in brickle chips. Serve with apples. Refrigerate any leftovers. Yield: 2 cups.

Spinach & Artichoke Dip

Spinach & Artichoke Dip From Olive Garden

Ingredients:

2 fresh artichokes
1 lemon, juice squeezed
1 tsp salt
OR
1 14-oz can artichoke hearts, drained and sliced
1 lb cream cheese, room temperature
8 oz mascarpone cheese, room temperature
2 Tbsp all-purpose flour, sifted
1 cup Parmesan cheese, grated
1/4 tsp fresh thyme leaves
1/4 tsp crushed red pepper
1 Tbsp fresh flat leaf parsley, chopped
1 garlic clove, minced
5 green onions, chopped
Salt to taste
Ground black pepper to taste
1 6-oz pack fresh spinach, chopped
8 slices crusty Italian bread
Extra virgin olive oil (to drizzle)
4 fresh artichokes
2 lemon, juice squeezed
2 tsp Salt

Procedures:

Preheat oven to 325ºF. PREPARATION WITH FRESH ARTICHOKES
BOIL artichokes in 3 quarts water with 1 tsp salt and lemon juice.
COOL artichokes. Clean, peel, remove center “choke” and slice artichoke.
FOLLOW Dip Preparation steps below using fresh artichokes.DIP PREPARATION
MIX all ingredients in a large bowl, except bread and extra virgin olive oil.
COAT a large non-stick baking pan with pan spray; fill pan with mixture. Bake at 325ºF for about 25 minutes or until bubbling and center is hot.
DRIZZLE both sides of bread with extra virgin olive oil. Grill bread on both sides.
SPRINKLE top of heated dip with parmesan cheese.
Serve hot with grilled bread.

Hot Crab Dip

Hot crab, hot cheese, garlic ~ what's not to like?

Ingrediance:
1 cup mayonnaise
8 oz shredded chedder cheese
4 scallions, minced
6 ounces, canned crabmeat, drained
1 clove garlic, crushed
3 ounce cream cheese, softened, cut into chunks

Directions:
Combine everything in your slow cooker and stir together. Cover the slow cooker, set it to low, and let it cook for 1 hour. Remove lid & stir to blend in the now-melted cream cheese. Re-cover and cook for another hour.

Serve with celery pepper, and cucumber dippers

Yeld: 8 servings, each with: 372 calories, 37 g fat, 13 g protein, 1 g carbohydrate, trace dietary fiber, 1 g usable carbs

Mixed-Berry Pretzel Tart

Ingredients:
Crust
2 cups crushed pretzels
3 tablespoons sugar
12 tablespoons (1 1/2 sticks) unsalted butter, melted

Filling
8 ounces cream cheese
3/4 cup plus
1 tablespoon sugar
7 ounces plain Greek yogurt (not fat-free)
2 teaspoons vanilla extract
2 3-oz. packages strawberry gelatin
1 16-oz. package frozen unsweetened sliced strawberries
1 16-oz. package frozen unsweetened blueberries
3/4 cup heavy cream

Preparation
1. Make crust: Preheat oven to 400ºF; mist a 9-by-13-inch baking pan with cooking spray. Place crushed pretzels in bowl of a food processor. Add sugar and melted butter and pulse to combine. Press pretzel mixture into baking dish and bake for 8 minutes. Transfer to a wire rack and allow to cool completely, about 20 minutes.
2. Make filling: Using an electric mixer on medium speed, beat cream cheese with 3/4 cup sugar until well blended, about 2 minutes. Fold in yogurt and vanilla. Spread over cooled pretzel crust, cover with plastic wrap and chill for at least 2 hours.
3. In a large bowl, dissolve both packages of gelatin in 2 cups boiling water. Let cool until mixture begins to get syrupy, about 15 minutes. Stir in strawberries and blueberries and pour over cream cheese layer. Chill until firm, 2 to 3 hours.
4. Whip cream until soft peaks form. Add remaining 1 Tbsp. sugar and continue whipping until stiff peaks form. Cut tart into squares and serve with whipped cream.

Pumpkin Pancakes with Maple Crème

Pumpkin Pancakes with Maple Crème
This delectable breakfast treat is only 300 calories for two pancakes with toppings!

Ingredients:
Pancakes
• 1/2 cup whole wheat flour
• 1/2 cup all purpose flour
• 3/4 tsp baking soda
• 1/4 tsp kosher salt
• 1 tbsp ground cinnamon
• 1 tsp ground nutmeg
• 3 egg whites
• 3/4 cup canned 100 percent pure pumpkin puree
• 3/4 cup nonfat, plain yogurt
• 2 tbsp packed brown sugar
• 2 tsp vanilla extract

Maple Crème
• 4 oz. (1/2 cup) reduced-fat cream cheese, room temperature
• 1/4 cup pure maple syrup

Topping
• 3/4 cup toasted pecans, roughly chopped

Instructions:
In a large mixing bowl, whisk together the flours, baking soda, salt, cinnamon and nutmeg until well combined. In a second large mixing bowl, whip the egg whites until blended. Add the pumpkin, yogurt, brown sugar and vanilla extract, and whisk until combined. Pour the wet ingredients over the dry ingredients and stir together gently until just combined and smooth (no dry streaks should remain), taking care not to over mix. If time allows, let batter rest for 10 minutes.

Liberally coat a large skillet or griddle with oil spray and preheat it over medium heat. When the pan is nice and hot (after about 2 minutes) ladle 1/4 cup batter per pancake onto the surface. The batter will be thick, so it may help to spread it out with the back of a spoon. Cook the pancakes until they are golden brown, about 2 to 3 minutes per side. Recoat the pan with oil spray between batches to prevent the pancakes from sticking.

While the pancakes are cooking, prepare the maple crème. In a small mixing bowl, whisk together the cream cheese and maple syrup until smooth.

To serve, place two pancakes on each plate and top with 2 tbsp of maple crème. Sprinkle 2 tbsp of chopped pecans.

Note: To toast pecans, place them in a dry sauté pan over medium heat and toast, stirring or shaking the pan frequently, until they are lightly browned, about 5 minutes. Or spread the nuts out on a toaster oven tray and toast for 3 to 4 minutes.

Ingredients (makes two servings)
2 three-ounce beef tenderloin steaks, trimmed of excess fat
1 Tablespoon reduced sodium soy sauce
1 Tablespoon minced garlic
1 Tablespoon reduced sodium Worcestershire sauce
1/4 medium red onion sliced
1 head of cauliflower
2 Tablespoons reduced fat cream cheese
2 scallions, sliced
8 ounces fresh green beans, cleaned and trimmed
1/8 cup sliced almonds
1 Tablespoon Galeos Caesar or Ginger Wasabi Dressing
Sea Salt

Instructions

Steak:
Put soy sauce, 1 tablespoon garlic, and Worcestershire sauce in a bowl. Marinate steak for 10 minutes. Place steak on a hot grill. Cook 4-5 minutes each side for medium rare.

Green Beans:
Spray pan with cooking spray. Saute 2 teaspoons of garlic and almonds with string beans until al dente. Toss in Galeos dressing.

Cauliflower Mash:
Steam cauliflower. Place in food processor with cream cheese. Mix until smooth, but not too smooth. Top with scallions

Place steak on plate, top with a few red onion rings. Place green beans on plate. Place 1 cup of cauliflower mash on plate, top with scallions. Reserve remaining cauliflower mash for another use

Mini-Smoked Salmon Frittatas

Prep: 10 minutes; Cook: 30 minutes.

Ingredients:
1 tablespoon extra-virgin olive oil
1/4 cup diced onion
1/2 teaspoon salt
1/8 teaspoon pepper
4 ounces smoked salmon, cut into 1/4-inch pieces
6 large eggs
8 large egg whites
1 tablespoon half-and-half
3 tablespoons 1% milk
3 ounces 1/3-less-fat cream cheese, cubed
2 tablespoons scallions, thinly sliced, for garnish

Preparation:
1. Preheat oven to 325°. Heat oil in a nonstick skillet. Sauté onion 2–3 minutes or until soft; add salt, pepper, and salmon. Remove from stovetop; let cool.

2. Combine the next 4 ingredients (through milk) in a bowl. Stir in the cream cheese. Lightly coat 6 (8-ounce) ramekins with cooking spray. Add 2 tablespoons of salmon mixture to each ramekin. Pour 3/4 cup egg mixture into each ramekin. (Do not overfill.)

3. Place ramekins on baking sheet; bake 25 minutes or until a wooden pick inserted in center comes out clean. Garnish, if desired.

Chuck-A-Rama Carrot Cake & Frosting

Chuck-A-Rama Carrot Cake
1 1/2 Cups Sugar
1 1/2 Cups Flour
1 Teaspoon Baking Soda
1 Teaspoon Cinnamon
1/2 Teaspoon Salt
1/3 Cup Walnuts, Chopped
3/4 Cup Raisins
1/3 Cup Salad Oil
2 Eggs
1 Teaspoon Vanilla
3 1/4 Cups Carrots, Shredded

Directions:
1. Peel carrots.
2. Shred carrots using a 1/16 of an inch shredder hole.
3. Place first 7 ingredients in a large mixing bowl and mix by hand.
4. Add all remaining ingredients and mix by hand until well blended.
5. Place mix into a greased round 9 inch cake pan and bake at 350 degrees for 45 minutes or until done.
6. Let cool and frost with cream cheese frosting.

1 Pound Cream Cheese
1/2 Margarine
1 3/4 Powdered Sugar
2 Teaspoon Vanilla

Directions:
1. Place first 2 ingredients in a bowl and beat until smooth.
2. Scrape the bowl with a rubber spatula.
3. Add remaining ingredients and beat until light and fluffy.

The Cheesecake Factory™ Cheesecake Recipe

The Cheesecake Factory™ started as exactly that, a cheesecake factory. The founders, Oscar and Evenlyn Overton were selling some of the best cheesecake around to local restaurants when they decided to branch out and start their own restaurant. Today they’re consistently rated as one of the best places to spend an evening with friends as well as one of the most requested restaurant recipes.

The Recipe

Ingredients
Crust:

1/4 cup pecans chopped fine
1/4 cup walnuts chopped fine
1/4 cup almonds chopped fine
3/4 cup crushed vanilla wafers
2 tablespoons melted butter

Filling:
1 1/2 lbs cream cheese (do not use low fat)
1 1/3 cups sugar
5 large eggs
16 ounces sour cream
1/4 cup flour
2 teaspoons vanilla extract
2 teaspoons lemon juice (or try using 1 tsp of lemon zest)

Directions:

Let all of the cheesecake ingredients sit out on the counter while you’re making the crust. This will allow them to get to room temperature before you begin working with them.

Crust:

1.Place all of the nuts along with the vanilla wafer crumbs into a large bowl.
2.Drizzle the melted butter over the top of the mixture and mix by hand.
3.Lightly butter a 9″ springform pan
4.Press the crust mixture into the pan making sure you don’t let it get too think in the corners.
5.Do your best to make the sides even, about 1 1/2″ up the sides of the pan and then set aside.
Cheesecake:

1.Pre-heat the oven to 325 degrees.
2.Using an electric mixture on LOW (this is very important) beat the cream cheese until light and fluffy.
3.Continue mixing on LOW while you slowly add the sugar to the cream cheese.
4.Continue mixing on low while you add one egg at a time, beating after each egg.
5.Add flour, vanilla and lemon juice (or zest) and mix on low.
6.Add in the sour cream and mix on low until completely blended.
7.Pour the mixture into the springform pan.
8.Bake the cheesecake on the top rack of the 325 degree oven for 1 hour 15 minutes.
9.Once the timer goes off, prop your oven door open, turn off the oven and let the cake sit inside the oven for 1 hour.
10.Remove from the oven and let your cheesecake cool in the refrigerator for 24 hours.
11.Keep in mind, the longer you let this sit in the refrigerator, the better it’s going to taste. So don’t rush it.

Low-Cal Mini Cheesecakes

Makes: 12 servings
Prep time: 20 minutes
Bake time: 20 minutes


Ingredients
12 reduced-fat vanilla wafers
8 ounces reduced-fat cream cheese, softened
4 ounces fat-free cream cheese, softened
3 ounces white chocolate baking squares, melted and cooled
1/2 cup sugar
1/4 cup fat-free milk
1 1/2 teaspoons vanilla
1 egg white, lightly beaten

Chocolate curls (optional)
Sliced strawberries (optional)
Sliced kiwifruit (optional)

Directions
1. Preheat the oven to 350 degrees F. Line a muffin pan with twelve 2-1/2-inch foil or paper baking cups. Place one vanilla wafer on the bottom of each cup. Set aside.

2. In a medium bowl, beat cream cheeses with an electric mixer on medium speed 30 seconds. Beat in white chocolate, sugar, milk, and vanilla until well combined. Stir in egg white. Spoon mixture into muffin cups until each is about three-quarters full.

3. Bake about 20 minutes or until set, then set pan on a wire rack to cool 10 minutes. Remove cheesecakes from pan; cool on wire rack 1 hour. Cover and chill 3 to 24 hours.

4. Before serving, remove baking cups. If desired, garnish with chocolate curls, strawberries, and/or kiwifruit.

Chocolate Cheesecake

Makes: 14 servings

Ingredients
1/2 cup crushed graham crackers
2 tablespoons butter, melted
1 envelope unflavored gelatin
3/4 cup fat-free milk
2 8-ounce packages reduced-fat cream cheese, softened
1 8-ounce package fat-free cream cheese, softened
8 ounces fat-free sour cream
1/3 cup sugar
2 teaspoons vanilla
4 ounces bittersweet chocolate, melted and cooled
Chocolate curls

Directions

1.In a bowl, stir together the graham crackers and butter. Press the mixture into the bottom of an 8-inch springform pan. Chill while preparing the filling.
2.In a saucepan, sprinkle the gelatin over the milk; let stand for 5 minutes. Stir over low heat until the gelatin is dissolved. Remove from heat; cool for 15 minutes.
3.In a large bowl, beat the cream cheeses with a mixer until smooth. Beat in the sour cream, sugar, and vanilla; gradually beat in the gelatin mixture. Divide the cream cheese mixture in half; gradually stir the melted chocolate into one half.
4.Spread half of the chocolate mixture onto the crust. Spoon half of the remaining cream cheese mixture onto the chocolate mixture in small mounds; swirl them together with a butter knife.
5.Spread the remaining chocolate mixture on top. Spoon on the remaining cream cheese mixture, and swirl again. Cover; chill for 6 hours or until set.
6.Loosen the cake from the pan with a knife before removing the side of the pan. Cut the cake into wedges; top with chocolate curls.

Nutrition facts per serving (1 slice): 216 calories, 17g carbohydrate, 13g fat (7g saturated), 1g fiber

Trim the Fat
The average slice packs 38 grams of fat (22 of them saturated). We cut two-thirds of the fat but didn't nix it altogether, because it delivers that classic creamy, silky texture.

Raise the Bar
"Bittersweet chocolate has less sugar and more antioxidants than milk chocolate," Moore says. Its disease-fighting nutrients help decrease plaque buildup in your arteries and may improve blood pressure.

Top It Off
To create perfect curls, run a vegetable peeler along the edge of a chocolate bar. For a bigger antioxidant boost, Moore suggests using a small mesh strainer to dust the cake with cocoa powder before serving.

Raspberry-White Chocolate Cheesecake Bars

Ingredients
1 9-oz. box chocolate wafer cookies
5 tablespoons unsalted butter, melted
1 cup frozen raspberries, thawed
1/4 cup plus 2 Tbsp. sugar
2 8-oz. packages cream cheese, room temperature
2 large eggs plus 2 large yolks
1 tablespoon all-purpose flour
1 teaspoon vanilla extract
4 ounces white chocolate, melted and cooled

Preparation
1. Preheat oven to 350ºF. In a food processor, blend wafer cookies until completely crushed. Transfer to a bowl, pour in melted butter and mix until crumbs are evenly moistened. Pour crumbs into a 9-inch square baking pan, and use your fingers to press into an even layer over bottom and about 1/2 inch up sides of pan. Bake for 8 minutes, until firm. Transfer to a wire rack and let cool completely. Reduce oven temperature to 250ºF.
2. Combine raspberries and 1 Tbsp. sugar in a food processor and blend until smooth. Strain through a fine-mesh sieve into a bowl; discard solids. Using an electric mixer at medium speed, beat cream cheese and remaining 1/4 cup plus 1 Tbsp. sugar until smooth. Add eggs and yolks one at a time, beating briefly after each addition. Add flour and vanilla and mix just until combined. Fold in white chocolate.
3. Pour cheesecake mixture over cooled crust, spreading evenly. Drop spoonfuls of raspberry puree on top and, using a toothpick, drag raspberry puree through cheesecake to create a marbled effect, taking care not to drag in crust. Bake until edges are pale golden and cheesecake is just set in center, 1 hour and 15 to 20 minutes. Let cool completely on a wire rack, then cover and refrigerate until fully chilled, at least 2 hours. Cut and serve.

Chipotle Chile Powder
With flavor combining fiery, smoky, and chocolate-like nuances, chipotle chile powder finds affinity with a surprising array of foods.
Our Secret Twists:
Reinvent brittle: Give your nut brittle an intriguing, unexpected edge by stirring in 1 to 2 teaspoons chipotle chile powder. We loved it in our Walnut Brittle.
Add dimension to chocolate dishes: Combining chocolate and chiles is nothing new―think of Mexican mole sauces. Stir a teaspoon of the spice into your favorite brownie batter, devil’s food cake, or hot fudge sauce. Or dust a little on top of hot chocolate as you would nutmeg.

Crust

1 1/2 cup(s) chocolate wafer cookie crumbs
3 tablespoon(s) sugar
1/4 cup(s) unsalted butter, melted

3 package(s) (8-ounce) cream cheese, softened
3/4 cup(s) sour cream
2 teaspoon(s) vanilla extract
3 large eggs
3 ounce(s) semisweet chocolate

Directions

1.Crust: Heat oven to 350°F. Line a 13x9-inch baking pan with nonstick foil, extending beyond the short ends. Combine crumbs, sugar, and butter in a medium bowl, stirring to combine. Press mixture evenly into bottom of prepared pan. Bake 8 to 10 minutes, until set. Let cool on a wire rack.
2.Filling: Whisk sugar and malted milk powder in a medium bowl. Beat cream cheese in a large mixer bowl, about 4 minutes, until light and fluffy. Beat in sugar mixture until well blended. Beat in sour cream and vanilla until smooth. Beat in eggs until combined.
3.In a microwave-safe bowl, melt chocolate in microwave. Remove 1/2 cup malt batter and stir into melted chocolate. Pour remaining malt batter over crust. Pour chocolate batter over malt batter in a zigzag fashion; swirl with a thin knife to marbleize. Bake 35 to 40 minutes or until top is set. Cool completely on a wire rack; loosely cover and refrigerate, 4 hours or overnight.
4.Lift by foil to cutting board. Cut into 24 bars.
