Low Fat Crinkle Cookies

These cookies use only four ingredients, and mix up in less than 5 minutes! My Dad who doesn't usually even eat sweets, had one of these the other day and he called them awesome. And they are. Seriously awesome. Even better: they use no oil or butter. I know, you might be a little skeptical, too. But these are simply the lightest, softest, yummiest cookies ever.


Low Fat Crinkle Cookies



... Ingredients



1 box lemon cake mix (any kind)
1 egg, lightly beaten
2 cups Cool Whip, thawed (8 ounce container)
½ to 1 cup powdered sugar



Instructions:

Preheat oven to 350.
In a large bowl, combine cake mix, egg, and Cool Whip. The batter will be sticky!
Form dough into tablespoonfuls and roll in powdered sugar.
Bake for 8 to 10 minutes, until the edges are golden. Allow to cool 1 minute on baking sheet; then remove to wire rack to cool completely.

Pepperoni Pita Pizza - Denise Austin

Try This Quick Pizza Recipe!
The recipe here is for four pepperoni pita pizzas, but you can double — heck, triple! — this very easily. To round this out for a full lunch — more than a snack, less than a supper — add a lettuce salad or some cut-up veggies and a low-fat dressing for a dip. The best part is that the kids can even afford to have seconds! (But not you!)

Pepperoni Pita Pizza

Ingredients

2 whole-wheat pitas (6" diameter)
1 cup pizza sauce
1 cup shredded part-skim mozzarella cheese
2 oz. sliced turkey pepperoni (about 32 rounds)
¼ cup chopped roasted red peppers
4 tsp. grated Parmesan cheese
1 tsp. extra virgin olive oil

Preheat the oven to 400°F. Split the pitas in half to form circles.
Place the pita halves on two baking sheets. Spread ¼ cup pizza sauce on each pita half to within a half inch of the edge. Sprinkle each half with ¼ cup mozzarella. Arrange pepperoni slices on top of the cheese. Sprinkle each pizza with 1 tablespoon peppers and top with 1 teaspoon Parmesan. Drizzle the oil over the pizzas.
Bake for 10 minutes, or until the cheese is melted. Remove to serving plates and cut into quarters.

Makes 4 pizzas
Per pizza: 241 calories, 27 g carbohydrates, 13 g protein, 9 g total fat, 16 mg cholesterol, 4 g dietary fiber, 704 mg sodium

Banana Almond Pancakes with Fruit

Ingredients
2 bananas
1 egg
1-2 Tbs almond butter
fresh blueberries

1/4 cup walnuts, chopped
1 tsp. coconut oil


Instructions
Mash bananas in a bowl.
Add the egg and almond butter, and whisk until well blended.Heat a large non-stick skillet over medium heat along with a small pat of coconut oil.
Pour small discs of batter onto the hot pan (around 3-4″ around). They’ll be easier to flip if you keep them from the edges of the pan.
Add blueberries and walnuts as the pancakes cook on one side. Flip when batter loses its “tackiness” around the edges.
Cook other side slowly over medium heat until fully cooked.
Reapply oil to the pan after each round of pancakes.

I use to make this recipe all the time - recently I as akded to make this recipe & had forgotten all about Oh the apple dip. Yummmy! It's so easy & such a hit!

Ingredients
  • 1 package (8 ounces) cream cheese, softened
  • 1/2 cup packed brown sugar
  • 1/4 cup sugar
  • 1 teaspoon Spice Islands® pure vanilla extract
  • 1 package almond brickle chips (7-1/2 ounces) or English toffee bits (10 ounces)
  • 3 medium tart apples, cut into chunks

Directions

  • In a bowl, beat cream cheese, sugars and vanilla. Fold in brickle chips. Serve with apples. Refrigerate any leftovers. Yield: 2 cups.

Nutrition Facts: 1 serving (2 tablespoons) equals 174 calories, 9 g fat (5 g saturated fat), 20 mg cholesterol, 120 mg sodium, 22 g carbohydrate, 1 g fiber, 1 g protein.

1/2 cantaloupe
1/2 cup fat-free milk
Splenda to taste
3 cups water Ice cubes

Directions: Put all ingredients in blender & go! Yummy & healthy!

Spiced Roasted Carrots

Spiced Roasted Carrots - Seventh Generation

The recipe calls for cumin, but you can easily substitute chili powder or make the dish with only salt and pepper.

• Preheat oven to 400
• Peel one pound of carrots and cut them into strips that look like French fries
• In a bowl, mix 1 Tablespoon of extra virgin olive oil with 1 Teaspoon of cumin, or a little more to taste
• Add carrots to the bowl and mix until coated
• Place carrots on a cookie sheet, and sprinkle with salt and pepper
• Roast for 10 minutes. Mix with a spatula, and continue cooking until as crisp or as soft as you would like, 5 to 10 minutes more.

Makes 6

Ingredients:

1 1/2 cups pitted dates
1/4 cup raw macadamia nuts
2 tablespoons old-fashioned rolled oats
Pinch sea salt
1 cup strawberries, hulled and thinly sliced

Directions
1.Pulse dates, nuts, oats, and salt in a food processor until combined.
2.Press the date mixture into the bottom of a 9-by-5-inch loaf pan.
3.Mash half the strawberries and spread on top of date mixture. Top with remaining strawberries. Slice into rectangles.

Cole Slaw

Ingredient:

1 package of cole slaw mix or shred cabbage, onion, carrots & celery
1/2 cup Mayo
1 tsp sugar
2 tbsp white vinegar
1 1/2 tsp celery salt

Directions:
Put all ingredients into a bowl. Stir well & chill for 1-2 hours before serving.

***Very Easy***
