I keep forgetting to add my families German Pancake recipe.
What you will need:
9"x13" glass baking dish
Wisk or hand mixer
6 Tbl butter
1 Cup milk
1 Cup Flour
6 Eggs
1/4 tsp Salt (optional)
It seems that if you put the ingrediance together one way it will turn out puffy & flat.
If you put it together another way it will be flat in the middle & the sides will get very tall.
Get out your glass baking dish size 9"x13"
Add
6 Tb Butter sizzle
Put in your oven on 425 while waiting for the butter to sizzle and oven to pre heat. Mix the ingrediance below.
1 cup Milk
1 cup Flour
6 Eggs
1/4 tsp Salt (optional)
Once the butter is sizzling (make sure to not over cook butter/burnt butter is not yummy) remove the baking dish from the oven. Pour in batter into the glass baking dish, be careful not to let the butter pop on you. Put the dish back into the stove.
Cook for 25minutes and take out add the toppings of your choice.
Top with syrup, powder sugar, jam, strawberries or even whip cream.
We are simple we just go for syrup and powder sugar.
*You could also add to your batter Vanilla and Cinnamon to taste.

Banana Almond Pancakes with Fruit
Ingredients
2 bananas
1 egg
1-2 Tbs almond butter
fresh blueberries
1/4 cup walnuts, chopped
1 tsp. coconut oil
Instructions
Mash bananas in a bowl.
Add the egg and almond butter, and whisk until well blended.Heat a large non-stick skillet over medium heat along with a small pat of coconut oil.
Pour small discs of batter onto the hot pan (around 3-4″ around). They’ll be easier to flip if you keep them from the edges of the pan.
Add blueberries and walnuts as the pancakes cook on one side. Flip when batter loses its “tackiness” around the edges.
Cook other side slowly over medium heat until fully cooked.
Reapply oil to the pan after each round of pancakes.

Whole-Wheat French Toast With Fresh Strawberries
INGREDIENTS
3 tablespoons sugar-free raspberry or strawberry spreadable fruit
2 cups sliced strawberries
1 large egg
1 large egg white
2/3 cup low-fat (1 percent) milk
1 1/2 teaspoons vanilla extract
Pinch ground nutmeg
1 tablespoon unsalted butter, divided
8 slices thin whole-wheat bread
Preheat the oven to 200°F. Place a serving platter in the oven to hold the French toast.
Place the fruit spread in a medium bowl and stir until smooth. Stir in the strawberries. Set aside. In a pie plate or shallow bowl, beat the egg, egg white, milk, vanilla extract, and nutmeg with a fork until blended. Melt 1/2 tablespoon butter in a large nonstick skillet over medium heat. Dip a bread slice into the egg mixture, letting it soak briefly on both sides. Place the soaked slice in the skillet; add 1 or 2 more soaked slices. Cook, turning once, until lightly golden, about 3 minutes per side.
Place the cooked French toast in the oven to keep warm. Repeat with the remaining bread slices, adding the remaining 1/2 tablespoon butter as needed. Serve the French toast hot with the strawberry mixture on top.
Makes 4 servings
Per serving (2 slices): 270 calories, 38g carbohydrates, 11g protein, 10g total fat, 70mg cholesterol, 4g dietary fiber, 300mg sodium

Homemade Granola

¾ cup brown sugar
¼ cup water
2½ tsp vanilla
½ tsp - ¾ tsp salt
4 cups oats
½ cup peanuts, pecans or walnuts
1 cup almonds
1 cup dried fruit
Combine brown sugar and water and microwave 5 minutes or until the sugar is dissolved. Add vanilla and salt to liquid. Set aside.
Combine oats, nuts and fruit in a mixing bowl. Slowly pour liquid over dry ingredients and mix thoroughly.
Bake on a parchment paper lined baking sheet at 275 degrees for 45 minutes or until golden brown.
Store in Ziplocs or an airtight container. Use for cereal or snacks.

Banana's banana's What to do with all these banana's
I was able to get a bunch of free banana's after an event on the 4th of July.
Now they are starting to brown. Sadness starts to come, oh banana's please don't go brown...not yet.
We do love banana milk shakes & I do love banana bread. But there must be more yummy healthy amazing foods I could make with these banana's.
The benefits of banana's? As you may have seen on a previous post they are a great fruit.

Banana Pancakes I
MY Banana milk shake:
One that I always make is the milk shake I don't measer this I just throw it all in the blender.
What ever banana's need to be eaten the most 2 or 3
Milk we get 2% a few cups
Sometimes Vanilla Ice Cream a couple spoons (I don't do this so much any more if thinking healthy)
If I have strawberries or blue berries I throw some in. (all berries are great for you!)
The way I measure it is how much I know will fit in to the glasses that will be used. I eye ball it....
Blend it up & enjoy.
I hope that makes sense.
I love receips & I have a hard time not using one but this its a peice of cake you throw in what you know you like & blend.
Also I have added wheat germ for the benefits... it gave a slight nutty taste & is good for you.

Grilled Pineapple Pancakes with Blueberry Syrup and Toasted Coconut

•1/2 cups all-purpose flour
•3 1/2 teaspoons baking powder
•1 teaspoon salt
•1 tablespoon white sugar
•1 1/4 cups Gossner Milk
•1 egg
•3 tablespoons Gossner Butter, melted
•1/2 pineapple, sliced (approx 1/8”)
•1 cup blueberries
•1 cup syrup
•1/4 cup coconut flakes, toasted
•1/4 cup slivered almonds, toasted
In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Place a ring of pineapple in the batter circles. Brown on both sides and serve hot.
In a small saucepan, heat the blueberries and syrup. In a dry frying pan, toast the coconut and almonds over low heat for 5-8 minutes or until slightly golden brown. Top each pancake with syrup, toasted coconut and almonds. Serve immediately.

Bananas Foster French Toast
Bananas Foster French Toast
French toast gets a tasty twist with the addition of bananas, rum extract and pecans. The use of cinnamon bread is ideal!
SERVINGS: 8
8 slices cinnamon bread, cut into 1/2-inch cubes (about 8 cups)
8 eggs
1 cup milk
2 1/2 cups real maple syrup
1 teaspoon rum extract
6 ripe bananas, cut into 1/2-inch slices
1 cup chopped pecans
2. Heat oven to 350°F. Uncover; bake 35 to 40 minutes or until golden brown along edges. Let stand 7 to 10 minutes before serving.

I made the cinnamon bread from scratch a couple hours before cubing for this recipe.
I will be leaving out the nuts, rather then rum (I only have vanilla) vanilla will be used. I dont think I have a full 2 cups of syrup. Although there are a few changed I am hoping it will turn out tasty! Until tomorrow....

TOTAL TIME: 9 Hr 10 Min SERVINGS: 8

1. Spray bottom of 13x9-inch (3-quart) baking dish with cooking spray. Arrange bread cubes in baking dish. In large bowl, beat eggs, milk and 1/2 cup of the maple syrup with wire whisk. Pour over bread in baking dish. Cover and refrigerate 8 hours or overnight.
2. Heat oven to 350°F. Uncover; bake 35 to 40 minutes or until golden brown along edges. Let stand 7 to 10 minutes before serving.
3. Meanwhile, in medium microwavable bowl, microwave remaining 2 cups maple syrup uncovered on High 1 to 2 minutes, stirring every 30 seconds, until warm. Stir in rum extract.
4. Sprinkle banana slices and pecans evenly over bread; drizzle with warmed syrup mixture. Serve immediately.

When life gives you an extra cup of sour cream, what to
do? Why, make sugary, wonderful blueberry coffee cake, of course.
OK, so that’s my logic when I had leftover sour cream in
the fridge from making another dish. After all, why let all that creamy lusciousness
go to waste? With the addition of a little cake flour, plus a nifty trick where
you create a poofy rising agent from mixing the sour cream with the baking
soda, this recipe creates a sweet treat with a tender, moist, and very soft
crumb. It’s from “Baking by Flavor” (John Wiley & Sons) by baking
specialist Lisa Yockelson.
Yes, there’s quite a bit of granulated and brown sugar in
the topping. But hey, it wouldn’t be coffee cake without it. Plus, this cake
has a cup of fresh blueberries strewn throughout. With blueberries so rich in
antioxidants, you can tell yourself this cake actually might be just a tiny bit
good for you. That’s my logic, and I’m sticking to it.
Ingredients
Nonstick
cooking spray, for preparing baking pan
For cinnamon and sugar topping:
¼
cup granulated sugar¼ cup firmly packed light brown sugar, sieved if lumpy
2 teaspoons ground cinnamon
For cake batter:
1
cup thick, cultured sour cream½ teaspoon baking soda
1 ½ cups plus 2 tablespoons un-sifted bleached all-purpose flour
¼ cup un-sifted bleached cake flour
¾ teaspoon baking powder
¼ teaspoon salt
½ teaspoon ground cinnamon
½ teaspoon freshly grated nutmeg
1 cup fresh blueberries
1 stick of unsalted butter, softened
1 cup superfine sugar

2 teaspoons pure vanilla extract
Instructions
Preheat
oven to 350 degrees. Film the inside of a 9-by-9-by-2-inch baking pan with
nonstick cooking spray; set aside.
In a
small mixing bowl, thoroughly combine granulated sugar, light brown sugar, and
cinnamon; set aside.
Combine
sour cream and baking soda in a medium-size mixing bowl. The mixture will swell
and puff a bit as it stands.
Sift
flours, baking powder, salt, cinnamon, and nutmeg onto a sheet of waxed paper.
In a small mixing bowl, thoroughly toss blueberries with 1 ½ teaspoons of
sifted mixture. The blueberries must be well coated with the flour mixture, so
that they remain suspended in the cake batter.
Cream
butter in large bowl of a freestanding electric mixer on moderately low speed
for 2 minutes. Add superfine sugar and beat 1 to 2 minutes. Beat in eggs, one
at a time, blending well after each addition. Mix in vanilla extract.
On
low speed, add half of sifted ingredients, the sour cream-baking soda blend,
then the remaining sifted mixture. Scrape down the sides of the mixing bowl
frequently with a rubber spatula to keep the batter even-textured. The batter
will be moderately thick. Fold in blueberries.
Scrape
batter into prepared baking pan. Smooth over the top with a rubber spatula or
flexible palette knife. Sprinkle topping evenly over surface of batter.
Bake
cake in preheated oven for 35 minutes, or until set and a wooden pick inserted
in the cake withdraws clean. Cool cake in pan on a rack for at least 20 minutes
before cutting into squares for serving. Serve cake warm or at room
temperature.

1 small onion, diced
2 tablespoons olive oil
1 tablespoon minced garlic
One dozen organic eggs
3 cups milk or unsweetened soy milk
2 tablespoons fresh thyme
1 teaspoon salt
¼ teaspoon black pepper
1 cup quinoa
¼ cup fresh grated parmesan cheese (optional)
4 cups fresh spinach, chopped
Sauté the onion and garlic in olive oil until the onion begins to caramelize. Meanwhile, whisk together the eggs, milk, thyme, salt, and pepper. Wash the quinoa well and drain, then add to egg mixture. Add cheese. When onions are ready, lay spinach in an oiled pan, followed by the onions and then the egg mixture. Cover and bake for 35 to 40 minutes at 350 degrees. As the eggs bake, most of the quinoa will make its way to the bottom of the pan and form a crust—it’s like magic!

4 cups rolled oats
½ cup raw cane sugar (or other sweetener)

¾ cup dried cherries (or other dried fruit)
½ cup toasted slivered almonds or other nut
In a medium bowl, whisk together the softened butter, eggs, milk, and vanilla. In a separate bowl, combine the oats, sugar, cinnamon, baking powder, and salt. - 1 medium stalk zucchini, ends removed and coarsely grated
- 2 eggs
- 2-3 tablespoons virgin coconut oil or expeller-pressed coconut oil
- 1 teaspoon red onion, chopped
- freshly ground black pepper
- 2 teaspoons asiago cheese, grated (or to taste)
- 2-3 fresh basil leaves, minced
- 1 teaspoon coconut flour
- Himalayan salt, to taste
Grate zucchini into a bowl. Add eggs and mix thoroughly.
Start heating oil in a large skillet.
Add onion, black pepper, asiago cheese and basil to the zucchini. If the batter looks too liquidly, add a bit of coconut flour just to thicken slightly.
When the oil is hot but not smoking, put a forkful of batter into the pan, immediately mashing it down with a fork to spread the batter and form thin pancakes that can crisp easily. Repeat till pan is full. It's OK if the pancakes run together.
When the pancakes are golden brown or deeper brown on the underside, flip them over and cook on the second side. If they have stuck together, cut them in the skillet and flip them individually. When golden brown on the second side, remove pancakes. Drain on paper towels.
I like to add salt at the table rather than in the batter.

Pacific Almond milk makes deliciously thick and creamy smoothies. Lucky for us it's gluten free and dairy-free (always check labels on your particular brand). Chill a glass with a few ice cubes as you whip up this yummy smoothie.
1 cup unsweetened almond milk

Pinch of stevia to taste

Make Ahead Breakfast Burritos
Make Ahead Breakfast Burritos

Who said you can't have a hot breakfast even on school/workdays? Make up a batch of these breakfast burritos ahead of time and you'll be eating a healthy breakfast in just ten minutes!
Ingredients:
12 eggs
2 cups cheddar or Monterey Jack cheese, shredded
1 cup chopped veggie trio (red, peppers, green peppers, onions)
1/2 cup milk
salt & pepper to taste
24 medium flour tortillas OR 12 large flour tortillas
salsa
Make-Ahead Preparation:
In a large bowl, lightly beat the eggs with the milk and salt and pepper.
Heat a large non-stick skillet over medium heat. Add the egg mixture and cook, stirring constantly, being careful not to brown the eggs, until cooked through.
While the eggs are cooking, place your tortillas on a microwave-safe dish and cover with plastic wrap. Heat for 30 to 45 seconds or until tortillas are just slightly warm. (Warming the tortillas makes them more pliable. If your tortillas are already soft enough to roll, you can omit this step.)
When the eggs are cooked through, stir veggies.
Place ½ cup egg mixture into each tortilla (more if using larger tortillas); sprinkle with cheese and top with some salsa. Roll them up burrito-style.
Wrap each tortilla in tin foil, place on a large baking sheet and freeze. Once frozen through, transfer the burritos in batches to ziploc bags. Freeze for up to one month.
Last Minute Preparation:
Preheat oven to 350 degrees. Remove burritos from ziploc bags and heat in the tin foil for 10 to 15 minutes or until heated through.

■1/2 cup watermelon
■1/2 cup honeydew melon
■1/2 cantaloupe
■1/2 cup blackberries
■2 handfuls of spinach

Fit-as-a-fiddle Berry Pancakes
(From: The SleepOver Cookbook, By Hallie Warshaw)
I recomend this recipe me & my husband plan to make this again.
Ingredients:
1/2 Cup Whole-Wheat Flour
1/2 Cup unbleached all-purpose flour
1 tablespoon granulated sugar
1 teaspoon baking powder
1 teaspoon cinnamon
1 egg
1 Cup nonfat milk
1/2 teaspoon vanilla extract
1 tablespoon vegetable oil
2 tablespoons orange juice
1/2 cup fresh blueberries or frozen blueberries (thawed)
Maple syrup or applesauce
Vegetable cooking spray
Directions:
In a large Mixing bowl whisk flours, sugar, baking powder and cinnamon (dry ingredience). Form a well in the middle. Set aside.
In a small mixing bowl, whisk egg until foamy.
Add the milk, vanilla & oil, and mix to combine.
Gently pour the liquid mixture into the well of the dry ingredients and mix until just blended.
Add the Orange Juice & mix to Combine.
Gently stir in blueberries
Using 1/2c measure, pour the batter into the center of a lightly sprayed medium sized frying pan.
Cook for approximatly 3 min. or until underside becomes golden brown.
Using a spatula flip pancake over & continue to cook until otherside is golden.
Serve with butter, maple syrup, applesauce, powder sugar or anything you love on pancakes.

Pumpkin Pancakes with Maple Crème
Pumpkin Pancakes with Maple Crème
This delectable breakfast treat is only 300 calories for two pancakes with toppings!
Ingredients:
Pancakes
• 1/2 cup whole wheat flour
• 1/2 cup all purpose flour
• 3/4 tsp baking soda
• 1/4 tsp kosher salt
• 1 tbsp ground cinnamon
• 1 tsp ground nutmeg
• 3 egg whites
• 3/4 cup canned 100 percent pure pumpkin puree
• 3/4 cup nonfat, plain yogurt
• 2 tbsp packed brown sugar
• 2 tsp vanilla extract
Maple Crème
• 4 oz. (1/2 cup) reduced-fat cream cheese, room temperature
• 1/4 cup pure maple syrup
Topping
• 3/4 cup toasted pecans, roughly chopped
Instructions:
In a large mixing bowl, whisk together the flours, baking soda, salt, cinnamon and nutmeg until well combined. In a second large mixing bowl, whip the egg whites until blended. Add the pumpkin, yogurt, brown sugar and vanilla extract, and whisk until combined. Pour the wet ingredients over the dry ingredients and stir together gently until just combined and smooth (no dry streaks should remain), taking care not to over mix. If time allows, let batter rest for 10 minutes.
Liberally coat a large skillet or griddle with oil spray and preheat it over medium heat. When the pan is nice and hot (after about 2 minutes) ladle 1/4 cup batter per pancake onto the surface. The batter will be thick, so it may help to spread it out with the back of a spoon. Cook the pancakes until they are golden brown, about 2 to 3 minutes per side. Recoat the pan with oil spray between batches to prevent the pancakes from sticking.
While the pancakes are cooking, prepare the maple crème. In a small mixing bowl, whisk together the cream cheese and maple syrup until smooth.
To serve, place two pancakes on each plate and top with 2 tbsp of maple crème. Sprinkle 2 tbsp of chopped pecans.
Note: To toast pecans, place them in a dry sauté pan over medium heat and toast, stirring or shaking the pan frequently, until they are lightly browned, about 5 minutes. Or spread the nuts out on a toaster oven tray and toast for 3 to 4 minutes.

I’m sure you know that old trick about freezing bananas that have seen better days. You hold onto them until the banana-bread bug bites and then embark on a marathon baking session.
Well, I’m a devotee of this method — it’s as if the freezer performs magic, transforming fruit that looks too ripe to touch into an exotic delicacy.
But bread isn’t the only thing that frozen bananas are good for. It makes an excellent any-smoothie base because it produces a rich, creamy texture that’s just like ice cream — but better.
Smoothies are a great way to boost your nutritional intake and still feel like you’re getting away with something. Liquids are easier to digest and frequently more appetizing than solid food when you’re rushed, sick, pregnant or just plain bored.
So grab your blender and let’s get started.
Drop in that banana, then add some frozen fruit. Berries, stone fruits, grapes, citrus and tropical fruit all contribute a tart, punchy kick that’s as intense and colorful as candy.
Now for the vegetables.
Yep, that’s right. Smoothies are a great way to use the fresh or frozen vegetables. It may sound scary, but don’t run screaming from the blender just yet.
Greens may have an impact on the color of your drink, but they contribute a fairly delicate flavor, especially alongside all that sweet fruit. So toss in handfuls of frozen vegetables such as peas, broccoli or spinach. Their natural sweetness will make the vitamin boost completely painless.
You can also boost nutrients in a smoothie by blending in a vitamin supplement, a scoop of wheat germ, a handful of nuts, a smear of nut butter, a chunk of fresh ginger, a drizzle of honey or maple syrup, or milled flaxseed, wheat germ or ground cinnamon.
Now pour in a little juice, water or yogurt to help it all liquefy. Then let ‘er rip.
Blend everything until smooth, and then taste a bit to see if you need to tweak the flavors or consistency.
There are no hard and fast ratios or recipes. Just experiment with what you have and what you know you like. Then get busy dreaming up your favorite, adventurous combinations.
Still feeling less than confident? Allow me to share a few of my favorite “non-recipes”:
Good morning • frozen banana, frozen peach, fresh ginger, fresh kale and apple juice.
Mid-afternoon reward • frozen banana, peanut butter, frozen peas, honey and plain yogurt.
Up before the sun • frozen strawberries, frozen pineapple concentrate, fresh carrots, orange juice and a squeeze of lemon.
Carrot cake • Frozen banana, fresh carrots, walnuts, wheat germ, cinnamon, maple syrup and plain yogurt.
Peanut butter • Frozen banana, peanut butter, frozen corn, vanilla extract and plain yogurt.
Feelin’ a little tart • Frozen blueberries, frozen broccoli (go easy) and cranberry juice.
Easy being green • frozen banana, frozen peas, frozen broccoli (go easy) and white grape juice.
Cherry pie • frozen cherries, frozen carrots, unsalted cashews, wheat germ, honey and almond milk.
Antioxidant punch • frozen strawberries, fresh spinach, almonds and pomegranate juice.
Case of the blues • frozen blueberries, frozen peas, plain yogurt and maple syrup.
Orange you pretty • frozen carrots, fresh ginger (go easy) and orange juice.

Zucchini Mint Frittata
Makes one 8-inch square pan.
1 tablespoon extra virgin olive oil
1 medium onion, diced
1 medium zucchini, cut in 1/8-inch-thick half moons
10 eggs
¾ cup cream (or substitute unsweetened soy milk)
¼ cup parmesan cheese (optional)
¼ cup finely sliced mint leaves
1 teaspoon salt
Pinch of black pepper
Heat oil in a sauté pan over medium heat, add onions and sauté until caramelized. Add zucchini and sauté 1 minute, until zucchini begins to soften. Transfer vegetables into an oiled baking dish. Lightly beat the eggs with the cream, cheese, mint, salt, and pepper. Pour egg mixture over vegetables. Bake at 325 degrees until eggs are set, about 15 to 20 minutes. Serve immediately, or cool and serve chilled with a salad or fruit.
