Wake-Up Smoothie

With a stash of berries in your freezer, you can jump-start your day with this nutritious, tasty smoothie in just minutes. It provides vitamin C, fiber, potassium and soy protein.
Ingredients
Prep: 5 minutes | Total Time: 5 minutes
  • 1 1/4 cups  orange juice, preferably calcium-fortified
  • 1 banana
  • 1 1/4 cups frozen berries such as raspberries, blackberries, blueberries and/or strawberries
  • 1/2 cup  low-fat silken tofu or low-fat plain yogurt
  • 1 tablespoon  sugar or sugar-substitute, optional
Instructions
Combine orange juice, banana, berries, tofu (or yogurt) and sugar (or sugar substitute), if using, in a blender; cover and blend until creamy. Serve immediately.

Raw Vegan CHOCOLATE COCONUT CREAM TORTE

1/2 cup pitted dates
1/2 cup raw cacao powder
¼ tsp cinnamon

Dash of cayenne
In a food processor with the S blade, mix until a crumb texture is reached. Set aside.
Coconut Cream Filling
2 cups firm young coconut pulp
5 bananas
1/4 cup coconut oil

4-5 pitted medjool dates
½ tsp vanilla extract or caviar scraped from 1 bean
Blend ingredients until creamy. Set aside and refrigerate.

6-8 large firm strawberries, de-stemmed and sliced 1/8” thick

Top Chocolate Layer
1 cup young coconut pulp
3 Tbsp coconut oil
½ cup raw cacao powder
3 pitted medjool dates
3 black mission figs
½ tsp vanilla extract or caviar scraped from 1 bean
¼ tsp cinnamon
Dash of cayenne
Blend ingredients until thick and smooth, adding just enough coconut water to turn over in blender. Set aside.

Garnish
1 cup assorted berries - raspberry, blueberry, sliced strawberries
1 tsp honey
Mint leaves (optional)
Blend the honey with about a few of the strawberries to make a glaze. Toss gently with the berries and mint and refrigerate until ready to serve.

Assembly:
1. Press crust recipe evenly into a 9” spring-form torte pan with a removable side greased with a little coconut oil.
2. De-stem, then slice the strawberries the long way and press the large pieces against the inside of the torte pan. Use the smaller heels in the garnish..
3. Pour in and spread the Coconut Cream Filling.
4. Freeze for 2 hours to firm up.
5. Pour on and spread the top chocolate layer mix. Refrigerate or freeze again until firm.
6. When ready to serve, first arrange the fruit garnish on top.

Directions

1 can (21 oz) raspberry pie filling
1 pouch (1 lb 1.5 oz Betty Crocker double chocolate chunck cookie mix

3/4 Cup butter or margarine, melted
Heat oven to 350°F. Spray bottom and sides of 11x7-inch (2-quart) glass baking dish with cooking spray. Spread pie filling in bottom of baking dish. Sprinkle cookie mix evenly over pie filling. Pour melted butter evenly over cookie mix. Using small metal spatula, gently spread melted butter over cookie mix just to cover the dry mix.

Bake 28 to 30 minutes or until topping is set. To serve warm, cool 15 minutes or serve at room temperature. Store covered in refrigerator.

Cantaloupe And Raspberry Smoothie (This recipe yields 4 servings)

4 cups cantaloupe -- peeled/seeded/diced
•3 cups raspberries
•1/4 cup honey
•1 cup milk
•1/2 cup plain yogurt
•1/2 cup buttermilk
•1/2 cup pine nuts
Stir the honey into the raspberries. Cover and refrigerate 1 hour. Puree berries in a food processor and then pass them through a fine mesh sieve. Discard the solids. Place the puree in a large bowl and stir in the milk, yogurt, buttermilk, and melon pieces and refrigerate until chilled. When ready to serve, put 2 cups of the mixture in a blender and liquefy. Pour into a pitcher. Repeat, adding the pine nuts to the blender with the last batch of the fruit mixture.
Stir the smoothie before serving. Norwegian cruise ships serve this at dinner as fancy "Fruit Soup". I serve it all the time and call it a delicious smoothie. The secret to the sparkling flavor of these delicately crumbed muffins is the strips of lemon zest finely ground into the sugar. Enjoy the muffins warm right from the oven.

1 dozen muffins | Active Time: 15 minutes | Total Time: 40 minutes

Ingredients:
•1 lemon
•1/2 cup sugar
•1 cup nonfat buttermilk, (see Tip)
•1/3 cup canola oil
•1 large egg
•1 teaspoon vanilla extract
•1 cup white whole-wheat flour, or whole-wheat pastry flour (see Shopping Tip)
•1 cup all-purpose flour
•2 teaspoons baking powder
•1 teaspoon baking soda
•1/4 teaspoon salt
•1 1/2 cups fresh or frozen (not thawed) raspberries

Preparation:
1.Preheat oven to 400°F. Coat 12 large (1/2-cup) muffin cups with cooking spray or line with paper liners.
2.Use a vegetable peeler to remove the zest from the lemon in long strips. Combine the zest and sugar in a food processor; pulse until the zest is very finely chopped into the sugar. Add buttermilk, oil, egg and vanilla and pulse until blended.
3.Combine whole-wheat flour, all-purpose flour, baking powder, baking soda and salt in a large bowl. Add the buttermilk mixture and fold until almost blended. Gently fold in raspberries. Divide the batter among the muffin cups.
4.Bake the muffins until the edges and tops are golden, 20 to 25 minutes. Let cool in the pan for 5 minutes before turning out onto a wire rack. Serve warm.

Chalet Hot Raspberry Sauce gains distinction with a dash of white paper.

Makes about 2 cups

This quick prepare-ahead sauce has a surprise ingredient—white pepper—and is guaranteed to bring compliments from your guests.

3 cups fresh raspberries
1/3 cup sugar
1/8 tsp. white pepper
Juice of half a lemon (about 3 Tbs.)
1/2 cup water
Grated zest of 1 lemon (about 4 tsp.)
Mint leaves for garnish

Purée 1 1/2 cups of the fresh raspberries in a small blender. Add the sugar, white pepper, lemon juice, and water. Remove the seeds by stirring and pressing the mixture through a strainer into a bowl. Add 2 tsp. of the lemon zest.

At serving time, heat the sauce slowly to boiling, then remove it from the heat. Stir in the remaining 1 1/2 cups fresh berries. Serve immediately over individual rice puddings or ice cream. Garnish the top of each with the remaining lemon zest and the mint leaves.

Raspberriessss Tips - Berry Trifle

Last year I was given some raspberry starts today I picked my first raspberry. I must say it was delish!
Now I shall compile tips on growing them & recipes....

From Fine Gardening:
Raspberries are not just another tasty berry; they are loaded with healthful attributes. They're high in fiber and contain vitamin A, folate, antioxidants, and numerous minerals; the juice contains vitamin C; and those sometimes-annoying little seeds contain vitamin E. And, of course, if you have a raspberry patch, you have endless dessert possibilities.

The key elements to raspberry success are careful selection of plant type, a good solid trellising system, and husbandry techniques that match the needs of the plant. Once everything is in place, your raspberry patch will provide you with many years of satisfaction.

Pruning for a long harvest season (I will need to do this)

The smooth green 1-year-old canes and the rougher brown 2-year-old canes are easy to tell apart. Each spring, 1-year-old canes are trimmed back to below the fruiting area, and 2-year-old canes are removed completely.

The main purpose of pruning is to get rid of older canes in favor of newer canes that will produce fruit. In late summer, some of your newly planted canes will begin to fruit at the top of the cane and continue into the fall. In the early spring of the following year, while the plants are still dormant, it's time to prune these now 1-year-old canes, and here is where we do something special.

The common method of pruning everbearing raspberries is simply to cut all of the canes down to about 1 inch from the ground. Though it's an easy way to go, this method eliminates the July crop. Fruiting doesn't begin until early fall, the reason some raspberry growers call everbearing raspberries "fall bearing." (This method is useful, however, if a disease has developed in your patch.)

Instead, the first spring, we cut the 1-year-old canes back to below the fruiting area, level with the top support wire. These shortened canes begin fruiting in July. In the meantime, leafy new canes, called primocanes, grow rapidly up from between the old canes. These new canes will flower and fruit later in the summer. We thin them out and clear away those suckers that popped up around the patch. The following spring, we remove the 2-year-old canes completely to make room for new growth, cutting them off at the ground, and we trim back the 1-year-old canes. We usually top-dress our raspberry patch with well-rotted manure and berry fertilizer in early spring. You can also prune summer-fruiting varieties using this method.

Recipe: Berry Trifle

Berry Trifle
10 generous servings, or 16 smaller ones

This summer party dessert looks spectacular in a traditional 12-cup trifle bowl. You can also make it with just raspberries.

Custard:
2 cups milk
3/4 cup sugar
1/2 cup flour
2 egg yolks
1 Tbs. butter
2 tsp. vanilla
2 cups whipping cream

Fruit:
1 pint raspberries
1 pint blueberries
1 pint strawberries
2 Tbs. confectioner’s sugar
2 Tbs. sherry or orange juice

Cake:
3 oz. package lady fingers
Half a 9 oz. angelfood cake
1/4 cup sherry or orange juice

To make the custard: Scald the milk in a heavy pot. Mix the sugar and flour together, and place in the top of a double boiler over hot water. Whisk in the scalded milk, then quickly whisk in the egg yolks. Cook, stirring, until the mixture becomes thick enough to coat the back of a spoon. Remove from the heat and whisk in the butter and vanilla. Pour the custard into a bowl and cover with plastic wrap or waxed paper to prevent a skin from forming on top. Refrigerate until cool.

Reserve a few whole berries to decorate the top. Place the rest of the raspberries and blueberries in a bowl. Slice the strawberries and add them to the bowl. Add the sugar and the 2 Tbs. sherry. Let the mixture steep 30 to 45 minutes to allow some of the fruit juices to be drawn out.

Whip the cream and mix a third of it into the custard; reserve the rest.

To assemble the trifle: Place 1 cup of the fruit mixture in the bottom of a 12-cup glass trifle bowl. Arrange the ladyfingers around the outer sides of the bowl. Top the ladyfingers with berries. Spoon half the custard mixture into the center of the bowl. Cut a couple of slices of angelfood cake into pieces and scatter them on top of the custard, then drizzle half the sherry on it, and top with the remaining fruit. Cover the fruit with slices of angelfood cake and drizzle it with the remaining sherry. Add the remaining custard to the dish, then spread the rest of the whipped cream evenly over the top.

Garnish the trifle with the reserved berries and mint or other edible leaves. Cover lightly with plastic wrap and refrigerate for several hours to allow the flavors to meld.

Yields: 1 quart (about 4 servings)
Total Time: 25 min

Ingredients:

1 cup(s) (6 ounces) fresh raspberries, rinsed
2/3 cup(s) sugar
1 cup(s) lemon juice
2 cup(s) water

Directions:

1.In a small bowl, with a potato masher or spoon, mash 1 cup rinsed fresh raspberries (6 ounces) with 2/3 cup sugar. Let stand 10 minutes. Press through a fine strainer into a pitcher (at least 1 1/2 quarts); discard seeds.
2.Stir in 1 cup lemon juice and 2 cups water. Taste and add more sugar if desired. Pour into tall, ice-filled glasses.

Orange-Scented Cornmeal Cake With Fresh Berries
Ingredients

For the cake:
3/4 cup whole-grain pastry flour
1/4 cup cornmeal
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/3 cup + 1 tablespoon sugar, divided
3 tablespoons extra-virgin olive oil
1/2 cup plain fat-free yogurt
2 large eggs
1 tablespoon grated orange peel
2 tablespoons orange juice
1/4 teaspoon ground cinnamon

For the berry sauce:
1 cup blackberries
1 cup blueberries
1 cup raspberries
1 tablespoon sugar
1 tablespoon orange juice

Preparation

To make the cake: Preheat the oven to 350°F. Coat a 9-inch springform pan with cooking spray.

In a small bowl, combine the four, cornmeal, baking powder, baking soda and salt.

In a large bowl, combine 1/3 cup of sugar and the oil. Using an electric mixer on high speed, beat for 2 minutes. Add the yogurt, eggs, orange peel, and orange juice. Beat for 1 minute. Add the dry ingredients and beat until blended. Pour the batter into the prepared pan.

In a small bowl, combine the remaining 1 tablespoon sugar and the cinnamon. Sprinkle over the batter. Bake for 20 to 25 minutes, or until a wooden toothpick inserted in the center comes out clean. Transfer to a wire rack and let cool.

To make the berries: In a food processor or blender, puree 3/4 cup of the blackberries, the sugar, and the orange juice until smooth. Strain the puree through a sieve into a small bowl; discard the seeds. Cut the cake into wedges. Spoon the berry sauce over the wedges and sprinkle with the blueberries, raspberries, and remaining blackberries.

Note: When you use an electric mixer to beat citrus peel into a batter, a lot of the peel can cling to the beaters. Be sure to scrape any peel from the beaters back into the batter.

Makes 8 servings

Raspberry, Avocado, and Mango Salad

Ingredients:

1 1/2 cups organic raspberries, divided
1/4 cup extra virgin olive oil
1/4 cup red wine vinegar
1 clove fresh garlic, coarsely chopped
1/4 teaspoon Kosher salt
1/8 teaspoon black ground pepper
8 cups organic mixed salad greens
1 ripe organic mango, diced
1 small ripe avocado, diced
1/2 cup thinly sliced red onion
1/4 cup hazelnuts, toasted and chopped, or sliced almonds (optional)

Preparation:
Puree 1/2 cup raspberries, oil, vinegar, garlic, salt and pepper in a blender until combined.
Combine greens, mango, avocado and onion in a large bowl. Pour the dressing on top and gently toss to coat.
Divide the salad among 5 salad plates. Top each with the remaining raspberries and sprinkle with nuts, if using.

2 Quarts Raspberries
2 Quarts Blackberries
14 Cups Sugar
1/4 Cup Lemon Juice
6 Ounces (1 Box) Liquid Pectin

Directions:
1. Place berries in a stock pot along with the sugar and lemon juice.
2. Place on high heat and stir once per minute until you reach a rolling boil.
3. Add pectin and boil for 4 minutes (set a timer) stirring well once per minute.
4. Remove from heat and place in a plastic container and chill overnight.

Raspberry-White Chocolate Cheesecake Bars

Ingredients
1 9-oz. box chocolate wafer cookies
5 tablespoons unsalted butter, melted
1 cup frozen raspberries, thawed
1/4 cup plus 2 Tbsp. sugar
2 8-oz. packages cream cheese, room temperature
2 large eggs plus 2 large yolks
1 tablespoon all-purpose flour
1 teaspoon vanilla extract
4 ounces white chocolate, melted and cooled

Preparation
1. Preheat oven to 350ºF. In a food processor, blend wafer cookies until completely crushed. Transfer to a bowl, pour in melted butter and mix until crumbs are evenly moistened. Pour crumbs into a 9-inch square baking pan, and use your fingers to press into an even layer over bottom and about 1/2 inch up sides of pan. Bake for 8 minutes, until firm. Transfer to a wire rack and let cool completely. Reduce oven temperature to 250ºF.
2. Combine raspberries and 1 Tbsp. sugar in a food processor and blend until smooth. Strain through a fine-mesh sieve into a bowl; discard solids. Using an electric mixer at medium speed, beat cream cheese and remaining 1/4 cup plus 1 Tbsp. sugar until smooth. Add eggs and yolks one at a time, beating briefly after each addition. Add flour and vanilla and mix just until combined. Fold in white chocolate.
3. Pour cheesecake mixture over cooled crust, spreading evenly. Drop spoonfuls of raspberry puree on top and, using a toothpick, drag raspberry puree through cheesecake to create a marbled effect, taking care not to drag in crust. Bake until edges are pale golden and cheesecake is just set in center, 1 hour and 15 to 20 minutes. Let cool completely on a wire rack, then cover and refrigerate until fully chilled, at least 2 hours. Cut and serve.

Raspberry-Cream Pavlovas

This dessert is perfect for a pair or for a dinner party. Unfilled Pavlovas can be stored in an airtight container at room temperature up to two days, and any leftovers can be assembled just before serving. Raspberry curd will keep for up to a day in the refrigerator.

Pavlovas:
10 ounce(s) frozen red raspberries, thawed in bag
2 large egg whites
1/2 cup(s) sugar
Pinch of salt

Filling:
2 large egg yolks
1/4 cup(s) sugar
2 1/2 tablespoon(s) unsalted butter
Pinch of salt
1 cup(s) heavy cream

Directions

Make the Pavlovas: Put raspberries into a fine sieve set over a medium bowl. Let drain, reserving 2 1/2 tablespoons juice; set juice aside. Press raspberries through sieve into bowl (you should have 3 to 4 tablespoons puree); discard solids, and reserve puree for filling.
Put egg whites, sugar, and salt into the heatproof bowl of an electric mixer set over a pan of simmering water. Whisk until sugar has dissolved, about 2 minutes. Attach bowl to mixer fitted with the whisk attachment. Add reserved raspberry juice. Beat on medium-high speed until soft peaks form, 2 to 4 minutes.

Preheat oven to 175 degrees. Line a rimmed baking sheet with a nonstick baking mat or parchment paper. Using a spoon or a rubber spatula, form meringue into six 3 1/4-inch rounds on prepared sheet. Use the back of a spoon to make an indentation in center of each round. Bake until centers are just set and edges are crisp, 1 1/2 to 2 hours. Let cool completely on sheet on a wire rack.

Make the filling: Whisk egg yolks, 3 tablespoons reserved raspberry puree, and the sugar in a small saucepan. Cook over medium-low heat, whisking constantly, until thickened, about 4 minutes. Remove from heat; whisk in butter and salt. Transfer to a small bowl; place plastic wrap directly on surface of curd to prevent a skin from forming. Refrigerate curd at least 1 hour (up to 1 day).

Put cream into the bowl of an electric mixer fitted with the paddle attachment. Beat on medium-high speed until soft peaks form. Serve Pavlovas topped with raspberry curd and whipped cream.

1/4 cup milk
2 teaspoons vanilla
2 eggs
3/4 cup sugar
1/4 cup Original Bisquick® mix
2 packages (8 oz each) cream cheese, cut into 16 pieces and softened
1 cup fresh raspberries
2 tablespoons sugar


1. Heat oven to 325°F. Spray bottom only of 9-inch glass pie plate with cooking spray. In blender, place milk, vanilla, eggs, 3/4 cup sugar and the Bisquick mix. Cover; blend on high speed 15 seconds. Add cream cheese. Cover; blend 2 minutes. Pour into pie plate.

2. In same blender, place 1/2 cup of the raspberries and 2 tablespoons sugar. Cover; blend on high speed 15 to 20 seconds or until smooth. Drop blended raspberry sauce by teaspoonfuls on top of cream cheese mixture. With a wooden skewer or toothpick, swirl sauce into cream cheese mixture.

3. Bake 28 to 32 minutes or until about 2 inches of edge of pie is set while center is still soft and wiggles slightly. Cool completely at room temperature, about 1 hour.


4.Refrigerate at least 4 hours. Garnish with remaining 1/2 cup raspberries. Store in refrigerator.
