Raw Vegan CHOCOLATE COCONUT CREAM TORTE




by :Eric Rivkin you can also find this recipe in Eric new E-book :TO LIVE FOR♥ Bottom Layer Crust:1 cup raw almonds or pecans, soaked 2 hours, rinsed 1 cup fresh or dried finely shredded unsweetened coconut
1/2 cup pitted dates
1/2 cup raw cacao powder
¼ tsp cinnamon

Dash of cayenne
In a food processor with the S blade, mix until a crumb texture is reached. Set aside.
Coconut Cream Filling
2 cups firm young coconut pulp
5 bananas
1/4 cup coconut oil

4-5 pitted medjool dates
½ tsp vanilla extract or caviar scraped from 1 bean
Blend ingredients until creamy. Set aside and refrigerate.

6-8 large firm strawberries, de-stemmed and sliced 1/8” thick

Top Chocolate Layer
1 cup young coconut pulp
3 Tbsp coconut oil
½ cup raw cacao powder
3 pitted medjool dates
3 black mission figs
½ tsp vanilla extract or caviar scraped from 1 bean
¼ tsp cinnamon
Dash of cayenne
Blend ingredients until thick and smooth, adding just enough coconut water to turn over in blender. Set aside.

Garnish
1 cup assorted berries - raspberry, blueberry, sliced strawberries
1 tsp honey
Mint leaves (optional)
Blend the honey with about a few of the strawberries to make a glaze. Toss gently with the berries and mint and refrigerate until ready to serve.

Assembly:
1. Press crust recipe evenly into a 9” spring-form torte pan with a removable side greased with a little coconut oil.
2. De-stem, then slice the strawberries the long way and press the large pieces against the inside of the torte pan. Use the smaller heels in the garnish..
3. Pour in and spread the Coconut Cream Filling.
4. Freeze for 2 hours to firm up.
5. Pour on and spread the top chocolate layer mix. Refrigerate or freeze again until firm.
6. When ready to serve, first arrange the fruit garnish on top.

NO Bean Hummus Recipe

Try this awesome bean-free hummus recipe!

You’ll need:

■1.5 cups zucchini, peeled and chopped
■1 Tbs Lemon juice
■2 Tbs tahini
■2 cloves garlic
■pinch of cayanne
■sea salt to taste

Place all ingredients in a food processor and blend until smooth. That’s it!!

Health begins in the gut, and a happy gut is bean free! With this delicious recipe you won’t even miss those beans!
You can carrots, celery any veggi you like to dip.

This tasty smoothie, which makes a great snack for children and grownups alike, comes from Food & Mood by Elizabeth Somer, M.A., R.D. (Henry Holt & Co.).

1/2 cup low-fat plain yogurt
1/2 banana, sliced
3/4 cup orange juice
1 1/2 Tbs. peanut butter
1/2 cup chopped peeled apple
1/4 cup wheat germ

Optional: 1/2 tsp. cinnamon
1 tsp. vanilla extract
Grated lemon peel & ice cubes

Process ingredients in a blender until creamy.

Or, if you prefer a tangier nutrient cocktail, try this antioxidant-rich combo which is high in vitamin C and the full range of carotenoids thought to protect the cells from free radical damage:

2 medium carrots
1 celery stalk
1/2 red bell pepper
1/2 apple
2 Tbs. chopped fresh parsley
1/2 large tomato

Optional: 1 garlic clove
1 green onion
dash of cayenne

Put all the ingredients in a juicer and process until smooth.

Grande Beef Nachos

From the book: 125 best Food Processor Recipes:

Serves 6

1 bag Tortilla chips
8oz Chedder cheese, cut into chuncks
8zo Monterey Jack cheese, cut into chunks
1 onion cut into quarters
1 can pinto or black beans, drained & rinsed
1 tsp chili powder
1 tsp paprika
3/4 tsp salt
3/4 tsp dried onion flakes
1/4 tsp cayenne pepper
1/4 tsp onion powder
1/8 tsp ground oregano
8oz lean ground beef
1/4 cup sour cream

Directions:


1. On a microwave-safe platter, place chips in a single layer. Set aside.


2. In work bowl (food processor) fitted with shredding blade, shred Cheddar & Monetary Jack cheese. Transfer to a bowl & set aside.


3. Replace shredding blade with metal blade. With the motor running, drop onion through feed tube & process until finely chopped. Into the work bowl, add beans, chili powder, paprika, salt, onion flakes, cayenne pepper, onion powder & oregano & process until smooth, 2-3 minutes.


4. In a large skillet over medium heat, cook ground beef until no longer pink, 10-15 minutes. Drain off fat. Add bean mixture & cook, stirring, until hot.


5. Spoon beef mixture over chips. Sprinkle cheese mixture over top. Microwave for 20 seconds or until cheese is bubbling. Garnish with sour cream.


TIP: Do not place the hot meat mixture over the corn chips until you are ready to microwave. It will make them soggy.

Kripalu House Dressing

Kripalu House Dressing
Deb: A guest favorite for years. Enjoy it over your salads or steamed vegetables. This dressing will keep for two weeks in your refrigerator.

Makes approximately 2 cups.

1 cup sunflower oil or grape seed oil
2 tablespoons toasted sesame oil
¼ cup tamari (natural soy sauce)
½ cup lemon juice
⅓ cup sesame tahini
2 cloves garlic
½ tablespoon dry mustard powder
½ teaspoon salt
½ tablespoon chili powder
pinch cayenne
½ cup water

Combine all ingredients and blend using a standard blender or immersion blender.

Have a cough that just won't go away? Try The Doctors' Cough Remedy!
1 cup grapes (with seeds)
2 tablespoons honey*
2 tablespoons lemon juice*
1 dash cayenne pepper*

*Adjust proportions to taste

Combine all ingredients and mix in a blender. Serve warm, as the warmth of the liquid will not only soothe
the throat and lungs, but also help break down mucus buildup.

The ingredients in the cough remedy work in the following ways:
Grapes
• The seeds contain high levels of proanthocyanidins, natural chemicals packed with powerful antioxidant
properties.
• They fight against lung cancer and promote positive lung cell growth.
Honey
• The texture can help soothe and protect the throat from irritation.
